Winery Background and History

Philipponnat was officially founded in 1910 in Mareuil‑sur‑Aÿ, though the family’s presence in Champagne dates back over 500 years. The house is known for its deep respect for terroir and tradition, especially through the use of the solera method to integrate reserve wines into non‑vintage blends. Acquired by Lanson‑BCC, it remains family‑led under Charles Philipponnat’s stewardship. The result is premium, terroir‑driven Champagnes that balance intensity, freshness, and complexity without losing elegance

 


Producer and Wine Maker

Under Charles Philipponnat, the house embraces a philosophy of craftsmanship and precision. The non‑vintage blends are crafted from first‑press cuvée and reserve wines aged in oak barrels via the solera system. The winemaking team ensures consistency and depth year after year while maintaining freshness. This meticulous approach has elevated the house’s reputation for expressive rosé Champagnes

 


Vineyards and Micro Climate

Philipponnat sources grapes from its own holdings in Aÿ, Mareuil‑sur‑Aÿ, and surrounding premier and grand cru sites, benefiting from south‑facing slopes and chalky soils. The Montagne de Reims terroir brings structure and richness, while cooler microclimates preserve acidity and aromatic finesse—ideal for producing balanced rosé blends

 


Vinification & Aging Methods

The rosé is produced via the saignée method, blending in around 7% still red wine from Pinot Noir. Reserve wines (25–30%) are aged in wooden barrels using the solera method. Partial malolactic fermentation is conducted, and dosage is approximately 9 g/L. The use of oak and reserve wines adds depth and consistency across vintages

 


Tasting Notes

Salmon pink with copper highlights. On the nose: summer berries such as cherry and wild strawberry, citrus and grapefruit peel evolving over time. Palate: elegant and generous with rich red fruit, creamy mousse, vibrant acidity, and a juicy but refined finish

 


Food & Wine Pairing

Pairs beautifully with smoked fish, smoked meats like ham or bacon, veal, lamb, and rich pâtés. Also works well with lighter fruit desserts—especially red berries—or as an elegant aperitif

 


Service Methods and Temperatures

Serve chilled between 8–10 °C. Use tulip or broad Champagne glasses to showcase its texture, mousse, and aromatic nuances efficiently


Storage and Aging Potential

This NV rosé is ready to drink upon release but can age gracefully for several years. The inclusion of reserve wines provides structure and allows for maintained freshness over time
