Winery Background and History
Founded in 1928 by Italian immigrant Vittorio De Bortoli, De Bortoli Wines has grown into one of Australia’s most esteemed family-owned wineries. Initially rooted in the Riverina region of New South Wales, the winery expanded into the Yarra Valley in 1987, acquiring an existing vineyard and winery. The Yarra Valley Estate, managed by Leanne De Bortoli and her husband, winemaker Steve Webber, has become renowned for producing premium cool-climate wines, reflecting the family’s commitment to quality, innovation, and sustainability.
Producer and Winemaker
The 2021 Black Noble was crafted under the guidance of Senior Winemaker Julie Mortlock, who brings extensive experience and a passion for producing premium wines. Mortlock’s meticulous approach ensures that each vintage maintains its renowned quality and character. Her philosophy emphasizes minimal intervention, allowing the unique characteristics of the Semillon grapes to shine through in the final product.
Vineyards and Micro Climate
The grapes for this wine are sourced from the Riverina region in New South Wales, known for its diverse microclimates and fertile soils. The 2021 growing season featured average rains during winter and early spring, benefiting vine health and fruitfulness. A mild growing season with no prolonged heatwaves provided perfect ripening conditions, allowing the fruit to retain good varietal characteristics and to be harvested at optimal ripeness and flavor.
Vinification & Aging Methods
The fruit was hand-picked and sorted to open fermenters. A combination of whole berries and whole bunches was used. Fermentation occurred with ambient yeast, and a mixture of hand plunging and gentle turnovers was employed. The wine underwent 15–20 days of maceration, then was pressed and racked to new and used French oak barriques for 7 months of maturation.
Tasting Notes
The 2021 Black Noble exhibits a deep amber color with olive green hues. The nose offers aromas of toffee, coffee, raisins, and mandarin peel. On the palate, it presents rich raisin and dried date fruit flavors with hints of citrus peel, toffee, and caramel. The wine is concentrated and viscous with a lingering aged complexity.
Food & Wine Pairing
This dessert wine pairs well with a variety of dishes, including sticky puddings, dark coffee-chocolate torte, and richly flavored tiramisu. Its vibrant acidity and supple tannins also complement dishes like walnut ice cream, figs, and blue cheese. The wine’s balance and complexity make it a versatile companion to both simple and elaborate meals.
Service Methods and Temperatures
To fully appreciate the nuances of this dessert wine, serve it at a temperature between 7–9°C (45–48°F). Use dessert wine glasses with a slightly narrower bowl to concentrate the aromas. Decanting is not necessary, but allowing the wine to breathe for a few minutes after opening can enhance its bouquet and flavors. Proper serving enhances the wine’s complexity, allowing its layers of fruit, oak, and acidity to shine through with elegance and balance.
Storage and Aging Potential
The 2021 Black Noble is crafted for both immediate enjoyment and long-term aging. Stored under optimal conditions—cool, dark, and with consistent temperature and humidity—the wine will maintain its freshness and may develop additional complexity over the next 8–10 years.
