Distillery Background and History

 


The Macallan Distillery was founded in 1824 in Craigellachie, Speyside, Scotland, and has built a global reputation for crafting refined, oak-influenced single malt Scotch whiskies. The Macallan’s legacy centers on meticulous wood selection and ageing, particularly in sherry-seasoned oak casks. The Harmony Collection is a modern limited-edition series exploring creative narratives and sensory inspirations — in this case, celebrating tea culture and craftsmanship in collaboration with experts in the world of tea. 

 


 

 

Producer and Master Distiller

 


Produced by The Macallan under The Edrington Group, this Harmony Collection expression was developed by The Macallan’s Whisky Mastery Team in collaboration with JING, renowned curators of single garden teas. The team selected casks and blended components to reflect the aromatic and flavour spirit of the tea inspiration while maintaining The Macallan’s signature complexity. 

 


 

 

Raw Materials and Terroir

 


Made from 100% malted Scottish barley and pure Speyside water. While whisky lacks the vineyard terroir of wine, the local water quality and barley character influence fermentation profile and mouthfeel. The use of high-quality raw materials ensures a harmonious integration of spirit and cask flavours. 

 


 

 

Distillation Method and Still Type

 


Distilled in traditional copper pot stills, the classic methodology for single malt Scotch whisky, yielding a rich and concentrated spirit that evolves with extended cask influence. 

 


 

 

Maturation and Cask Management

 


This NAS release is matured predominantly in sherry-seasoned American oak casks, supported by sherry-seasoned European oak casks and a subtle inclusion of ex-bourbon American oak. The sherry oak provides rich fruit and spice influence, while the bourbon barrels add sweetness and textural balance, supporting the floral and tropical fruit themes inspired by Phoenix Honey Orchid Tea. 

 


 

 

Tasting Notes

 


Colour: Warm honey-golden hue. 

Nose: Floral honeyed notes with ripe peach and apricot, tropical fruit aromas and gentle oak spice. 

Palate: Silky layers of honeyed fruit, peach, apricot, tropical fruit depth, delicate toffee and soft florals reminiscent of the Phoenix Honey Orchid Tea’s aromatic complexity. 

Finish: Medium-long with lingering honey warmth, light oak, floral sweetness and gentle citrus zest. 

 


 

 

Food Pairing and Consumption Style

 


Pairs beautifully with light fruit desserts (e.g., honey-drizzled peach tart, apricot galette), floral panna cotta, almond biscotti and fruit and nut cheeses (e.g., mild Gouda). Works equally well as an elegant after-dinner dram or celebratory sip. 

 


 

 

Service Methods and Temperatures

 


Serve neat in a tulip or Glencairn glass at room temperature (18–20 °C) to concentrate delicate aromatics and reveal layered complexity. A few drops of pure water may open additional floral and fruit notes without muting balance. 

 


 

 

Storage and Aging Potential

 


Store the bottle upright in a cool, dark place away from direct sunlight and heat. Once bottled, the whisky’s character remains stable and does not continue to age — proper storage preserves its quality for years.
