The Macallan Distillery was founded in 1824 in Craigellachie, Scotland, and has become one of the world’s most respected producers of single malt Scotch whisky. The brand has built its reputation on traditional distillation, meticulous wood-selection and maturation practices, and an emphasis on expressive, complex whiskies. The Distil Your World series is a modern limited-edition initiative that draws inspiration from iconic global cities, translating cultural essence and sensory experiences into whisky expressions. 

 


 

 

Producer and Master Distiller

 


Produced by The Macallan under The Edrington Group and crafted under the guidance of Lead Whisky Maker Euan Kennedy, this edition was developed through an immersive exploration of Hong Kong’s culture. The creative process involved collaboration with culinary partners including the renowned Roca brothers from Spain’s El Celler de Can Roca, shaping flavour narratives that reflect the city’s layered character. 

 


 

 

Raw Materials and Terroir

 


Made from 100% malted Scottish barley, pure Speyside water, and traditional yeast. While whisky does not express vineyard terroir like wine, the quality of raw materials and local water influences texture and structural balance. 

 


 

 

Distillation Method and Still Type

 


Double-distilled in The Macallan’s traditional copper pot stills — standard for single malt Scotch production — yielding a rich, concentrated new-make spirit designed to integrate deeply with oak cask influences during maturation and finishing. 

 


 

 

Maturation and Cask Management

 


Matured in a curated marriage of sherry-seasoned European oak hogsheads and American oak casks, chosen to provide balance between rich sweetness, spice and aged oak character. This carefully selected oak influence underpins the series’ complex profile. 

 


 

 

Tasting Notes

 


Colour: Deep golden amber, shaped by oak and sherry wood influence. 

Nose: Rich resinous sweetness with ginger spice, antique oak, hints of tropical fruit (pomelo, mango), fragrant honey, and nostalgic egg-tart nuances that echo Hong Kong’s culinary culture. 

Palate: Viscous and multilayered with bright tropical fruit notes balanced by ginger, rounded spices, aged oak depth, grapefruit zest, and subtle umami-like richness. 

Finish: Long and evolving with lingering antique oak, gentle spice, dried fruit sweetness and warm citrus rind. 

 


 

 

Food Pairing and Consumption Style

 


Pairs beautifully with citrus-infused desserts, tropical fruit tart, spiced Asian cuisine, dark chocolate with orange zest, or fruit and nut-based desserts. Ideal as a contemplative after-dinner dram or for celebratory sipping, where its complexity can be savoured slowly. 

 


 

 

Service Methods and Temperatures

 


Serve neat in a tulip-shaped or Glencairn whisky glass at room temperature (18–20 °C) to concentrate aromatics and capture the whisky’s layered profile. A few drops of spring or mineral water may help open additional nuances without diluting its depth, though purists often prefer no water. 

 


 

 

Storage and Aging Potential

 


Store upright in a cool, dark place away from direct sunlight and heat. Whisky does not continue to mature once bottled, but if stored correctly, the character and complexity remain stable for many years, reinforcing its collectible nature.
