Distillery Background and History

Established in 1839 by Alexander Matheson in Alness on Scotland’s Cromarty Firth, The Dalmore was later taken over by the Clan Mackenzie in 1867—bringing in the iconic 12‑point Royal Stag emblem. Now part of Whyte & Mackay under Alliance Global, the distillery is renowned for its rich sherry-finished whiskies and high craftsmanship. Its scenic Highland location contributes to the elegance and smoothness of its single malts. 


Master Distiller and Production Philosophy

Under the leadership of master blender Richard Paterson OBE (“The Nose”), Dalmore prioritizes bold, aromatic whiskies that center on luxurious sherry maturation. The 18‑year expression reflects this philosophy: rich, refined, and well-balanced with structured depth.


Source of Ingredients (Grain, Water, Yeast)

Crafted from 100% malted Scottish barley, fermented with traditional yeasts, and distilled using water from the nearby River Averon (Loch Morie). These elements lend a silky texture, floral sweetness, and a distinctive Highland purity. 


Distillation Process

Produced in eight copper pot stills—three wash stills (13,000 L, one double‑sized) and four spirit stills with water-cooled necks to promote reflux and refinement. This design ensures smooth, fruit-forward, and elegant spirit. 


Maturation & Cask Information

Aged for 14 years in American white oak ex‑bourbon casks, then finished for 3–4 years in Matusalem Oloroso sherry butts selected from González Byass. These rare aged sherry casks—typically 30+ years old—impart rich dried fruit, caramel, and spice complexity. 


Tasting Notes

Nose: Warm honey, vanilla, orange marmalade, dried apricot, ginger, and subtle leather and smoke. 

Palate: Smooth and medium‑thin, with dark chocolate, raisin, fig, blackcurrant, espresso, coffee, nutmeg, and rich citrus notes. 

Finish: Medium-to-long; lingering tangy citrus peel, oak spice, caramel, toffee, and a hint of licorice. 


Food Pairing Suggestions

Pairs perfectly with dark chocolate desserts, fruitcake, roasted nuts, blue cheeses (like Stilton), and smoked duck or orange-glazed meats.


Serving Suggestions and Ideal Glassware

Best served neat or with a few drops of spring water in a Glencairn or tulip glass at 15–18 °C. Gentle swirling helps release complex aromas. Avoid ice to preserve flavor intensity.


Storage and Aging Potential

Store upright in a cool, dark place away from light and temperature swings. As a 43% ABV matured whisky, it is stable once opened; best enjoyed within 2–3 years for peak aromatic balance.
