Distillery Background and History

Talisker was founded in 1830 and began production in 1831 by the MacAskill family in Carbost on Scotland’s Isle of Skye. As one of the island’s oldest and most iconic distilleries, it joined Diageo’s “Classic Malts” in 1989. Talisker’s coastal warehouses and traditional design embody the spirit of Skye. It gained global acclaim when the 18-year-old expression won “Best Single Malt in the World” at the 2007 World Whiskies Awards  .


Master Distiller and Production Philosophy

Operating under Diageo’s Classic Malts team, Talisker maintains a heritage-driven production style. Their philosophy focuses on precision: long fermentation in wooden washbacks, use of swan-neck lyne pipes, and steam-heated stills. These practices aim to balance the distillery’s bold peat, maritime salinity, and refined complexity for a consistent, polished profile  .


Source of Ingredients (Grain, Water, Yeast)

The whisky is made from 100% malted barley (from Muir of Ord or Port Ellen Maltings) peated to ~18–22 ppm. Cnoc nan Speireag spring water provides drinking clarity, and fermentation uses proprietary yeasts in pine washbacks. The peat-flavored water and barley ensure a distinct coastal character  .


Distillation Process

Double distilled in traditional copper pot stills—two wash stills (~10,000 L) and three spirit stills (~7,500 L)—using swan-neck lyne pipes and worm-tub condensers. This method condenses heavier compounds, resulting in a full-bodied, robust spirit that retains smoky richness and maritime depth  .


Maturation & Cask Information

Aged for 18 years in refill American bourbon and sherry casks (and some rejuvenated sherry), the long maturation in Skye’s cool, maritime climate enhances oak sweetness and integrates smoky, spicy notes. Bottled at 45.8% ABV with non-chill filtration and no added color for pure flavor expression  .


Tasting Notes

 

  • Nose: Honeyed peat, sea brine, floral sweetness, faint citrus, toffee, subtle vanilla and dry oak  .

  • Palate: Rich peat, smoked black pepper, honeycomb, dried fruit, leather, roasted coffee, chili spice, and marine salinity .

  • Finish: Long, elegant, smoky with peppery warmth, dark chocolate, tobacco, and oak spice  .

 


Food Pairing Suggestions

Perfect with smoked seafood (salmon, oysters), grilled meat, dark chocolate, charcuterie, spicy dishes, and citrus-based desserts like orange tart—all complementing its smoky, peppery, and maritime layers.


Serving Suggestions and Ideal Glassware

Serve neat or with a drop of still water in a Glencairn or tulip glass at 15–18 °C to highlight its rich aroma and complex palate.


Storage and Aging Potential

As a fully matured expression, it will not age further in the bottle. Store upright in a cool, dark environment (12–16 °C) to preserve its flavor; remains stable and enjoyable for many years.
