Winery Background and History

San Giusto a Rentennano is a historic estate located in the southern part of the Chianti Classico region in Tuscany, Italy. Originally a Cistercian monastery, the property was transformed into a fortress in the Middle Ages and has been owned by the Martini di Cigala family since 1914. The estate encompasses 160 hectares, with 31 hectares dedicated to vineyards. Since 2001, the vineyards have been cultivated organically, reflecting the family’s commitment to sustainable viticulture and the production of high-quality wines that express the unique terroir of the region. 


Producer and Winemaker

The Martini di Cigala family oversees the operations at San Giusto a Rentennano, with Enrico Martini di Cigala playing a pivotal role in the winery’s management. The family’s philosophy emphasizes traditional winemaking techniques combined with modern practices to enhance the expression of their wines. Their dedication to quality and authenticity has positioned the estate as one of the leading producers in the Chianti Classico appellation.


Vineyards and Micro Climate

The estate’s vineyards are situated in the southernmost part of the Chianti Classico zone, benefiting from a Mediterranean climate characterized by warm days and cool nights. The soils are predominantly composed of limestone and clay, providing excellent drainage and contributing to the complexity of the wines. The combination of altitude, exposure, and soil composition creates an ideal environment for cultivating Sangiovese and Canaiolo grapes, resulting in wines with depth, structure, and elegance.


Vinification & Aging Methods

The 2021 Le Baroncole is crafted from 97% Sangiovese and 3% Canaiolo grapes. Fermentation occurs in cement and steel tanks over a 15-day period, followed by maceration to extract color and tannins. The wine is then aged for approximately 20 months in French oak barrels ranging from 225 to 500 liters, allowing it to develop complexity and integrate its tannic structure. After bottling, the wine rests for an additional six months before release, ensuring optimal balance and maturity. 


Tasting Notes

The 2021 Le Baroncole exhibits a deep ruby color with garnet reflections. On the nose, it offers intense aromas of ripe black cherries, sweet plums, and hints of blackcurrant, complemented by notes of mocha, leather, licorice, and incense. The palate is full-bodied and concentrated, featuring firm yet fine-grained tannins, vibrant acidity, and a long, persistent finish. The wine’s structure and complexity suggest significant aging potential.


Food & Wine Pairing

This Chianti Classico Riserva pairs exceptionally well with hearty dishes such as grilled lamb, beef stew, and roasted game. Its robust structure and vibrant acidity also complement rich pasta dishes like pappardelle with wild boar ragù or mushroom risotto. Aged cheeses, particularly Pecorino Toscano, further enhance the wine’s depth and complexity.


Service Methods and Temperatures

To fully appreciate the nuances of the 2021 Le Baroncole, it is recommended to decant the wine for at least one hour prior to serving. Serve at a temperature of 16–18°C (60–64°F) in large, tulip-shaped glasses to allow the aromas to fully develop and the flavors to express themselves on the palate.
