Distillery Background and History
Mortlach distillery, established in 1823 in Dufftown, Speyside, Scotland, is the region’s first legal distillery. Owned by Diageo with deep links to Johnnie Walker blends, Mortlach remains a cornerstone of Speyside whisky, famed for its bold, meaty spirit and historic Dufftown heritage .
Master Distiller and Production Philosophy
Production is overseen by Diageo’s Classic Malts team, maintaining meticulous control over fermentation and distillation. Emphasis is placed on honoring Mortlach’s unique multistill legacy while balancing tradition with precision—allowing robustness, complexity, and consistency to shine in each bottle .
Source of Ingredients (Grain, Water, Yeast)
Mortlach uses 100% Speyside-sourced malted barley, lightly peated to enhance character. Fermentation occurs in six large larch washbacks using yeast strains optimized for flavour extraction. Water is drawn from the local Conval Hill springs, imparting regional purity .
Distillation Process
The distillery employs a distinctive 2.81× distillation technique using three wash stills and three spirit stills, including the “Wee Witchie” intermediate still. This multifaceted method builds richness and complexity, resulting in a viscous, flavorful spirit unique to Mortlach .
Maturation & Cask Information
The 20-Year expression is matured exclusively in sherry casks, imparting deep fruit, spice, and nutty layers. Over two decades in Speyside’s temperate climate ensures refined integration between spirit and oak for a luxurious, polished profile .

Food Pairing Suggestions
Pairs superbly with aged Manchego or Gouda, dark chocolate, roasted game, sticky toffee pudding, and spiced nuts—complementing its rich, sherried depth.
Serving Suggestions and Ideal Glassware
Serve neat in a tulip-shaped Glencairn glass at 16–18 °C. Optionally add a few drops of still water to reveal subtler aromas and mellow tannins.
Storage and Aging Potential
As a mature bottling, it won’t age further in the bottle. Store upright in a cool, dark environment (12–16 °C) to prevent cork issues. This 20-year-old will remain stable and flavorful for decades after purchase.
