Distillery Background and History

Mortlach, founded in 1823 in Dufftown, Scotland, is the region’s oldest legal distillery. Known as “The Beast of Dufftown,” it pioneered a unique 2.81-distillation method. Today owned by Diageo and integral to Johnnie Walker blends, it remains a cornerstone of Speyside whisky, celebrated for its rich, savory character and historic legacy. 


Master Distiller and Production Philosophy

Managed by Diageo’s Classic Malts team, Mortlach maintains its traditional fermentation in larch washbacks and precise distillation, adhering to its iconic 2.81 setup. The focus is on retaining bold, savory flavors while achieving balance and consistency in this single malt expression.


Source of Ingredients (Grain, Water, Yeast)

Crafted entirely from Speyside-sourced malted barley, lightly peated, with fermentation driven by proprietary yeast strains in wooden washbacks. Water is drawn from local springs on Conval Hill, contributing to its signature purity and minerality. 


Distillation Process

The 16-year uses Mortlach’s historic 2.81-distillation method—three wash stills and three spirit stills, including the smaller “Wee Witchie” intermediary still—yielding a rich, viscous spirit with depth and complexity. 


Maturation & Cask Information

Matured exclusively in first-fill and refill sherry butts, the whisky develops rich dried fruit, spice, and savory layers. The Speyside climate allows slow maturation, ensuring a harmonious integration between spirit and oak. 


Tasting Notes

Nose: Raisins, apricot, honey, pecans, leather, and subtle cigar smoke.

Palate: Waxy sweetness, walnuts, coffee cake, black pepper, and red berries.

Finish: Medium-long with raisin, vanilla wafer, licorice, and lingering spice. 


Food Pairing Suggestions

Complements aged cheeses (Manchego, Gouda), dark chocolate, roasted game, sticky toffee pudding, and spice-scented nuts.


Serving Suggestions and Ideal Glassware

Serve neat or with a few drops of still water in a Glencairn glass at 16–18 °C to enhance aroma and flavor development.


Storage and Aging Potential

Since it’s fully matured and bottled, further aging won’t change character. Store upright in a cool, dark place (12–16 °C) to preserve quality; remains stable for decades if sealed properly.
