Winery Background and History
Kanaan Winery, established in 2011 by Wang Fang—affectionately known as “Crazy Fang”—is situated in the Helan Mountain East Foothills of Ningxia, China. The name “Kanaan” symbolizes a “land of milk and honey,” reflecting Fang’s vision for Ningxia as a premier wine-producing region. Despite the region’s harsh winters requiring vine burial, Kanaan has rapidly gained international acclaim for its high-quality wines, particularly its Cabernet Sauvignon-based blends. The winery combines sustainable viticulture with modern winemaking techniques, positioning itself as a leader in China’s burgeoning fine wine industry.
Producer and Winemaker
Wang Fang, inspired by her experiences in Germany, returned to China to pioneer quality winemaking in Ningxia. Her bold approach and commitment to excellence have earned her the moniker “Crazy Fang.” Collaborating with consultant winemaker Zhou Shuzhen, the team focuses on expressing Ningxia’s unique terroir through meticulous vineyard management and innovative winemaking techniques. Their shared emphasis on precision and innovation results in wines that are both expressive and reflective of the region’s potential.
Vineyards and Microclimate
The grapes for Wild Pony are sourced from vineyards located at approximately 1,200 meters elevation in Ningxia’s Helan Mountain East Foothills. The soils are predominantly sandy with gravel layers, offering excellent drainage and mineral balance. The region experiences significant diurnal temperature variation, with hot days and cool nights, which enhances flavor development while preserving acidity. These conditions contribute to the wine’s balanced structure and aromatic complexity.
Vinification & Aging Methods
Wild Pony 2021 is a blend of Cabernet Sauvignon, Merlot, and Cabernet Gernischt. The grapes were hand-harvested and fermented in temperature-controlled stainless steel tanks to preserve their varietal character. Post-fermentation, a portion of the wine was aged in oak barrels to impart complexity and structure. This aging process enhances the wine’s depth and integrates the tannins, resulting in a well-balanced and refined final product.
Tasting Notes
This wine exhibits a deep ruby color with vibrant clarity. The nose offers bright aromas of red fruits, earthiness, and spices. On the palate, it is full-bodied and balanced, showcasing ripe dark fruit flavors, finely structured tannins, and a pleasant level of acidity. The finish is long and elegant, with lingering hints of dark chocolate and a touch of minerality, reflecting the wine’s refined craftsmanship.
Food & Wine Pairing
Wild Pony 2021 pairs excellently with grilled red meats, such as lamb chops or beef tenderloin, where its robust structure complements the richness of the dishes. It also harmonizes with hearty stews, roasted game, and aged cheeses like Gouda or Comté. For a regional pairing, consider serving it alongside Chinese-style braised pork or duck, where the wine’s acidity and tannins balance the savory flavors and richness of the cuisine.
Service Methods and Temperatures
Serve this wine at 16–18°C (60–64°F) to fully appreciate its aromatic complexity and balanced palate. Decanting for 1–2 hours before serving is recommended to allow the wine to open up and reveal its full range of flavors and aromas. Use large, tulip-shaped red wine glasses to concentrate the aromas and enhance the tasting experience. Avoid serving too cold, which can mute the nuances, or too warm, which may over-accentuate the alcohol.
Storage and Aging Potential
Wild Pony 2021 has the structure and balance to cellar gracefully for 5 to 7 years. Under optimal conditions—cool (12–15°C), dark, with 70% humidity—it will evolve to reveal more tertiary notes like leather, dried plum, and cigar box. While already enjoyable, aging will enhance its complexity and round out its tannins. Bottles should be stored horizontally to keep the cork moist. If consuming young, decanting is advised to simulate bottle aging.
