Winery Background and History

Joseph Colin, son of renowned Burgundian winemaker Marc Colin and brother to Pierre-Yves Colin-Morey, established his own domaine in 2017 after years of working alongside his family. With a deep understanding of the Côte de Beaune’s terroirs, Joseph has quickly garnered acclaim for his precise and expressive wines that reflect the unique characteristics of each vineyard.


Producer and Winemaker

As the proprietor and winemaker, Joseph Colin emphasizes minimal intervention in both the vineyard and cellar. His approach focuses on showcasing the purity and minerality of Chardonnay, allowing the terroir to be the star of each bottle.


Vineyards and Micro Climate

The ‘La Chatenière’ vineyard is a Premier Cru site in Saint-Aubin, characterized by its steep slopes and soils rich in clay and limestone. The vines, over 45 years old, benefit from excellent drainage and sun exposure, contributing to the wine’s complexity and minerality. The 2022 vintage experienced favorable conditions, resulting in grapes with balanced acidity and concentration.


Vinification & Aging Methods

Grapes were hand-harvested and fermented using indigenous yeasts. The wine was aged in 500-liter oak barrels, with approximately 10% new oak, to preserve the wine’s freshness and allow the terroir to shine through. The wine was bottled unfined and unfiltered to maintain its integrity. 


Tasting Notes

This wine presents a brilliant pale yellow hue with golden reflections. The nose is expressive, offering aromas of white peach, pear, citrus blossom, and subtle hints of hazelnut and wet stone. On the palate, it is medium to full-bodied, showcasing a satiny texture with a pure core of fruit, bright acidity, and a saline finish. The wine marries tension and charm, delivering a harmonious and elegant experience. 


Food & Wine Pairing

This Chardonnay pairs beautifully with a variety of dishes, including shellfish, rich fish like salmon or tuna, poultry in creamy sauces, and mild, soft cheeses. Its vibrant acidity and mineral backbone complement both delicate and rich flavors. 


Service Methods and Temperatures

Serve the wine at 12°C to 14°C (54°F to 57°F) to fully appreciate its aromatic complexity and balance. Decanting for 15-20 minutes before serving can help open up its bouquet and enhance its flavors. Using large, tulip-shaped white wine glasses will concentrate the aromas and allow the wine to express its full character.


Storage and Aging Potential

Store bottles horizontally in a cool, dark place with consistent temperature and humidity. The 2022 vintage can be enjoyed now or over the next 8 to 10 years. With proper cellaring, it has the potential to develop additional complexity and depth, enhancing the wine’s richness and character.
