ighland Park 25 Years Old is a legendary expression from the world's most northerly distillery in Kirkwall, Orkney. It is the first spirit ever to receive a perfect 100-point score at the Ultimate Spirits Challenge, solidifying its status as a masterpiece of balance.

 

Distillery Heritage and History Founded in 1798, Highland Park is one of the few distilleries that remains fiercely loyal to ancient traditions. Located on the windswept Orkney Islands, the distillery’s character is shaped by the harsh environment and its Viking roots. The 25 Year Old is a "prestige" expression within their core range, representing the peak of the distillery’s maturation expertise and the unique "honeyed peat" profile that can only be found in Orkney.

The Master Distiller and Craftsmanship The creation of the 25 Year Old is overseen by Master Whisky Maker Gordon Motion. Unlike many modern distilleries, Highland Park still performs floor malting by hand, a labor-intensive process that ensures the barley absorbs the specific aromatic qualities of the local peat. The Master Whisky Maker carefully selects fewer than 20 casks to create each small batch of the 25 Year Old, ensuring that every bottle meets the exacting standards of this ultra-premium release.

 

The Orkney Peat and Water Source The defining characteristic of Highland Park is its Hobbister Moor peat. Unlike Islay peat, which is rich in wood and seaweed, Orkney peat is composed almost entirely of ancient heather. This results in a much sweeter, floral, and aromatic smoke. Combined with the mineral-rich water from Catti Maggie’s Spring, the spirit possesses a natural complexity that becomes exceptionally refined over a quarter-century of aging.

Maturation and Cask Selection Highland Park 25 Year Old is matured predominantly in first-fill Sherry-seasoned European oak casks. These expensive casks provide the deep mahogany color and the rich, spicy backbone of the whisky. The spirit also undergoes a unique "Cask Harmonization" process: after the final blend is created, it is returned to the casks for an additional period (usually several months) to allow the flavors to marry and settle before bottling, resulting in a remarkably smooth texture.

 

Tasting Profile

  • Appearance: Deep golden red, clear and bright (natural color).

  • Nose: Intense aromas of rich vanilla, dried fruits (sultanas and apricots), and a distinct floral hint of heather honey, wrapped in a very light, aromatic smoke.

     

  • Palate: Creamy and full-bodied. Initial notes of dark chocolate and fudge give way to warm spices like cinnamon and nutmeg. There is a persistent undercurrent of salted caramel and roasted nuts.

  • Finish: Incredibly long and drying. The sweet heathery peat smoke lingers alongside a touch of oak and dried orange peel.

Gourmet Pairings

  • Savory: Slow-roasted lamb with rosemary, seared scallops with a hint of bacon, or rich game meats like venison.

  • Cheese: Sharp, aged blue cheeses like Roquefort or Stilton, which contrast beautifully with the honeyed smoke.

  • Sweet: High-quality dark chocolate (80% cocoa) or a ginger-based cake.

Service and Consumption Methods This is a connoisseur's whisky and should be served neat or with two to three drops of room-temperature spring water. The water breaks the surface tension and "opens up" the floral heather notes and hidden citrus aromas. Due to its age and complexity, it is best enjoyed in a Glencairn glass, allowing the aromas to concentrate at the rim. Avoid ice, as it numbs the delicate oils developed over 25 years of aging.

 

Preservation and Storage Store the bottle upright in a cool, dark place. Unlike wine, whisky does not age in the bottle, but exposure to direct sunlight can fade its natural color and degrade the complex esters. Once the bottle is more than half empty, the oxidation process accelerates; to preserve the peak flavor of a 25-year-old malt, it is recommended to enjoy the remaining spirit within 6 to 12 months of opening.
