Winery Background and History

Domaine Jean Grivot, established in the 19th century, is a renowned family-owned estate located in Vosne-Romanée, within Burgundy’s Côte de Nuits region. The domaine has been passed down through multiple generations and is currently managed by Etienne Grivot, who took over from his father, Jean, in 1987. Spanning approximately 15 hectares, the estate includes parcels in prestigious appellations such as Nuits-Saint-Georges, Vosne-Romanée, and Echézeaux. The Grivot family is committed to sustainable viticulture and traditional winemaking techniques, aiming to produce wines that authentically express the unique terroirs of their vineyards.

Producer and Winemaker

Etienne Grivot serves as both the owner and winemaker of Domaine Jean Grivot. Under his stewardship, the domaine has gained acclaim for its meticulous vineyard management and minimalist intervention approach in the cellar. Etienne emphasizes the importance of terroir expression, focusing on organic farming practices and allowing indigenous yeasts to drive fermentation. His philosophy centers on crafting wines that reflect the purity and complexity of Pinot Noir, resulting in elegant and age-worthy expressions.

Vineyards and Microclimate

The Aux Lavières vineyard is a village-level lieu-dit situated in Nuits-Saint-Georges, located on the Vosne-Romanée side of the appellation. Positioned just below the Premier Cru Aux Murgers, Aux Lavières benefits from favorable terroir characteristics. The vineyard’s soil composition includes limestone and clay, providing excellent drainage and contributing to the wine’s minerality. The continental climate of the region, characterized by warm summers and cool winters, ensures optimal ripening conditions for Pinot Noir, resulting in wines with balanced acidity and refined tannins.

Vinification & Aging Methods

Domaine Jean Grivot employs traditional Burgundian winemaking techniques for their Nuits-Saint-Georges Aux Lavières. The grapes are hand-harvested and undergo meticulous sorting to ensure only the highest quality fruit is used. Fermentation occurs with indigenous yeasts, and the domaine practices minimal intervention to allow the natural expression of the terroir. The wine is aged in French oak barrels, with a restrained use of new oak, to enhance complexity without overshadowing the fruit character.

ABV (Alcohol by Volume)

The 2021 vintage of Domaine Jean Grivot Nuits-Saint-Georges Aux Lavières has an alcohol content of 13%.

Tasting Notes

While specific tasting notes for the 2021 vintage are limited due to its recent release, previous vintages of Aux Lavières have been noted for their elegance and depth. One can anticipate aromas of red berries, such as strawberry and cherry, complemented by earthy undertones like leather and mushroom. On the palate, the wine typically exhibits vibrant acidity, silky tannins, and a harmonious balance, leading to a persistent finish.

Food & Wine Pairing

This refined Pinot Noir pairs beautifully with dishes such as roasted duck breast, coq au vin, or mushroom risotto. The wine’s acidity and tannin structure complement the richness of these dishes, enhancing the overall dining experience. Additionally, soft cheeses like Brie or Camembert can harmonize with the wine’s nuanced flavors.

Service Methods and Temperatures

For optimal enjoyment, serve this wine at a temperature between 16°C and 18°C (60°F to 64°F). Decanting for about 30 minutes prior to serving can help to open up its complex aromas and flavors, especially in its youth. Using large, Burgundy-style glasses will allow the wine to express its aromatic profile fully.

Storage and Aging Potential

The 2021 Nuits-Saint-Georges Aux Lavières has significant aging potential. When stored in optimal conditions—cool temperatures around 12°C (54°F), consistent humidity, and away from direct light—the wine can develop additional complexity over the next 10 to 15 years, rewarding those with the patience to cellar it.
