Winery Background and History

Established in 1825, Domaine Faiveley is a family-owned estate based in Nuits-Saint-Georges, Burgundy. Over seven generations, the Faiveley family has expanded their holdings to include some of the most prestigious vineyards across the Côte d’Or. Under the leadership of Erwan Faiveley since 2005, the estate has embraced sustainable viticulture and modernized its winemaking facilities. Domaine Faiveley is renowned for producing wines that reflect the unique terroirs of Burgundy, combining tradition with innovation to craft wines of exceptional character and finesse.

Producer and Winemaker

Erwan Faiveley, representing the seventh generation of the family, has been instrumental in refining the estate’s winemaking approach. Collaborating with Technical Director Jérôme Flous, they focus on precision viticulture and minimal intervention in the cellar. Their philosophy centers on capturing the essence of each vineyard, ensuring that the wines reflect their unique origins. This dedication has led to wines that are both expressive and age-worthy.

Vineyards and Micro Climate

Les Cazetiers is a Premier Cru vineyard located in the northern part of Gevrey-Chambertin, adjacent to the Grand Cru Ruchottes-Chambertin. The vineyard’s name, meaning “Valley of the Monks,” hints at its historical significance. Situated on a steep slope with east-facing exposure, it benefits from optimal sunlight and excellent drainage. The soils are predominantly limestone and marl, contributing to the wine’s minerality and finesse. The cool microclimate ensures a slow ripening process, preserving acidity and enhancing aromatic complexity.

Vinification & Aging Methods

Grapes are hand-harvested and undergo meticulous sorting. Fermentation takes place in stainless steel vats, with careful temperature control to preserve the purity of fruit. The wine is then aged for 16 months in French oak barrels, with 50-60% new oak and the remainder in once-used barrels. This aging regimen imparts subtle oak nuances while allowing the vineyard’s character to shine through.

Tasting Notes

The 2022 Les Cazetiers exhibits a deep ruby red hue. The nose is expressive, offering aromas of ripe red cherries, wild strawberries, and subtle earthy undertones. On the palate, the wine is full-bodied and generous, with a silky texture and well-integrated tannins. Flavors of red fruits, toast, and a hint of spice lead to a long, persistent finish. This wine showcases the elegance and complexity characteristic of Gevrey-Chambertin’s premier crus.

Food & Wine Pairing

This refined Pinot Noir pairs beautifully with dishes such as roast duck, grilled lamb, or mushroom risotto. Its balanced acidity and silky tannins complement the richness of these dishes, while its aromatic complexity enhances their flavors. For cheese pairings, consider soft, bloomy-rind cheeses like Brie or Camembert to highlight the wine’s nuanced profile. The wine’s versatility makes it suitable for both elegant dinners and celebratory occasions.

Service Methods and Temperatures

Serve at 16°C to 17°C (61°F to 63°F) in large Burgundy-style glasses to fully appreciate its aromatic complexity. Decanting for 1 hour is recommended to allow the wine to open up and reveal its nuanced flavors. This preparation enhances the tasting experience, highlighting the wine’s elegance and depth.

Storage and Aging Potential

Store bottles horizontally in a cool, dark place with consistent temperature and humidity. The 2022 vintage has excellent aging potential, expected to evolve gracefully over the next 10 to 15 years. Over time, the wine will develop additional complexity, with tertiary notes such as dried fruits, forest floor, and subtle spice emerging, enhancing its depth and richness.
