The vineyards of Chêne Bleu are situated at an elevation of approximately 550 meters above sea level, near the village of Crestet in the Vaucluse department. The soils are diverse, comprising clay, limestone, and schist, contributing to the mineral complexity of the wines. Vinification & Aging Methods
The 2019 Astralabe is crafted from carefully selected grapes harvested by hand. After gentle pressing, fermentation occurs in stainless steel tanks to preserve the purity of fruit flavors. The wine is then aged in a combination of new and used French oak barrels for approximately 7 to 8 months, adding complexity and subtle oak nuances. Regular bâtonnage (lees stirring) is performed to enhance mouthfeel and integrate flavors.
