Distillery Background and History

Auchentoshan distillery, founded in 1823, is located in Dalmuir near Glasgow in Scotland’s Lowlands. It is one of the few remaining single malt distilleries in the Lowland region. Known for its signature triple distillation, Auchentoshan produces a lighter, more delicate spirit. It is now owned by Suntory Global Spirits. 


Master Distiller and Production Philosophy

Auchentoshan’s production philosophy emphasizes balance, elegance, and smoothness. The team (including master blenders) focuses on cask selection, consistent triple distillation, and ensuring the spirit retains floral, nutty, and citrus notes without being overpowered by wood.


Source of Ingredients (Grain, Water, Yeast)

The whisky is made from 100% malted barley. Water is drawn from local sources in the Kilpatrick Hills. The yeast strain is proprietary and not publicly disclosed. 


Distillation Process

Auchentoshan employs copper pot stills in a triple distillation sequence (wash still → intermediate still → spirit still). This extra distillation step is unusual in Scotland and contributes to the light, delicate character of their whiskies. 


Maturation & Cask Information

The 12-year expression is matured in a blend of ex-bourbon casks and Oloroso sherry casks. The combination aims to provide both lightness and added depth from sherry influence. 


Tasting Notes

 

  • Nose: Crème brûlée, citrus burst, toasted almonds, green leafiness. 

  • Palate: Smooth and sweet with hints of tangerine, lime, caramel, barley. 

  • Finish: Gingery, slightly drying, with lingering nuttiness. 

 


Food Pairing Suggestions

Pair with light citrus desserts (lemon tart), almond biscotti, soft cheeses (goat cheese), smoked salmon, or dishes with gentle sweet and nutty accents.


Serving Suggestions and Ideal Glassware

Serve neat or with a few drops of water to open aromas. Use a Glencairn or tulip whisky glass. Best enjoyed around 18–20 °C.


Storage and Aging Potential

Once bottled, store upright in a cool, dark environment. As a 12-year expression, it is fully matured for consumption; further age in the bottle offers slow, subtle evolution but no large transformations.
