Winery Background and History

Produced by Champagne Cattier in Rilly‑la‑Montagne, near Montagne de Reims, Armand de Brignac—co-owned by Jay-Z and LVMH—was launched in 2006. Each bottle is handcrafted, hand-riddled in deep chalk cellars, and finished with pewter Ace of Spades labels and metalized packaging, reflecting luxury and artisanal care  .


Producer & Wine Maker

Headed by Jean‑Jacques and Alexandre Cattier (12th–13th generation), the team employs meticulous selection of Chardonnay from prime Grand Cru sites—Cramant, Avize, Oger, and Montagne de Reims—to craft this Blanc de Blancs as the finest expression of Chardonnay terroir  .


Vineyards and Micro Climate

Fruit is sourced 50/50 from Côte des Blancs (Cramant, Avize) and Montagne de Reims, combining chalky soils with both minerality and roundness. The blend of multiple vintages (typically three) enriches complexity  .


Vinification & Aging Methods

The first pressed juice is fermented, including réserve wines aged for ~1 year in French oak barrels in subterranean caves. The multi-vintage blend rests on lees for several years, developing texture and depth ().


Tasting Notes

 

  • Color & Effervescence: Pale gold with ultrafine, persistent mousse  .

  • Aroma: Green apple, pear, white flowers (lilies), pastry, coconut, subtle gingerbread, and toasted hazelnut  .

  • Palate: Ethereal, mineral-driven with crunchy pear, guava, peach, citrus zest, brioche, vanilla, cinnamon, finishing crisp, dry, and elegant  .

 


Food & Wine Pairing

Perfect with delicate seafood like carpaccio of shellfish, sashimi, grilled sea bass, scallops, sushi, or light, creamy cheeses—the wine’s citrus-mineral freshness enhances subtle flavors  .


Service Methods and Temperatures

Serve well‑chilled at 8–10 °C in a tulip or refined flute to focus the nose and preserve its fine mousse. No decanting needed—pour on presentation to preserve bubbles.


Storage and Aging Potential

Fully mature and ready for enjoyment now. If stored upright at cool cellar temps (~12 °C, moderate humidity), it maintains its elegance—additional aging may gently evolve brioche character over 1–3 years.
