Vinification & Aging Methods
“Chalky” is a Blanc de Blancs Champagne made exclusively from Chardonnay grapes harvested in the 2013 vintage. The base wines underwent primary fermentation in stainless steel tanks, followed by secondary fermentation in the bottle. The wine was aged on its lees for seven years, enhancing its complexity and texture. Disgorgement occurred in spring 2021, with a dosage of 6 g/L, classifying it as a Brut Champagne.
