Winery Background and History

Established in 1896 by Don José Ruiz-Berdejo, Bodegas Lustau began as a modest almacenista in Jerez de la Frontera, Spain. Initially supplying sherry to larger producers, Lustau transitioned to bottling its own wines in the mid-20th century. The winery is renowned for its commitment to quality and tradition, utilizing the solera system for aging its products. Today, Lustau is recognized globally for its exceptional sherries and brandies, maintaining a balance between innovation and heritage.


Producer and Winemaker

Lustau’s sherries are crafted under the expertise of their dedicated team of enologists and cellar masters, who oversee the meticulous aging process. The production involves selecting high-quality Pedro Ximénez grapes, fermenting them, and aging the wine in seasoned sherry casks. Vineyards and Microclimate

The Pedro Ximénez grapes used for Lustau’s sherries are sourced from vineyards in the Jerez region of Spain, known for its unique albariza soils and warm, sunny climate tempered by Atlantic breezes. This climate contributes to the grapes’ balanced sugar and acidity levels, ideal for sherry production. The aging process occurs in Jerez de la Frontera, where the microclimate provides the perfect conditions for maturation in sherry-seasoned casks.


Vinification & Aging Methods

Lustau Pedro Ximénez San Emilio is produced from 100% Pedro Ximénez grapes. After harvesting, the grapes are sun-dried until they become raisins, concentrating their sugars. Fermentation is then initiated and halted to preserve natural sweetness. The wine is aged for an average of 12 years in American oak casks using the traditional solera and criaderas system in Jerez de la Frontera.


Tasting Notes

This sherry exhibits an ebony color with iodine highlights. The nose is rich with aromas of figs, raisins, and dates. On the palate, it is enormously sweet, velvety, and soft, yet well-balanced, culminating in a very long finish. 


Food & Wine Pairing

Lustau Pedro Ximénez San Emilio pairs excellently with rich desserts, cakes, and pastries. It is also delightful when poured over vanilla ice cream or paired with strong blue cheeses. Additionally, it serves as an ideal digestif. 


Service Methods and Temperatures

To fully appreciate its aromatic nuances and structural balance, serve this sherry slightly chilled, between 10–12°C (50–54°F). Using a white wine glass will allow the sherry to express its full bouquet. It can be enjoyed neat as a dessert wine.


Storage and Aging Potential

While Lustau Pedro Ximénez San Emilio is ready to enjoy upon release, it can be stored for several years without deterioration, provided it is kept upright in a cool, dark place away from temperature fluctuations. Unlike table wines, sherry does not significantly improve with bottle aging, but proper storage ensures the preservation of its quality and character over time.
