Winery Background and History
Los Vascos, situated in Chile’s Colchagua Valley, is a historic estate acquired in 1988 by Domaines Barons de Rothschild (Lafite). This acquisition marked the Rothschild family’s first venture outside France, aiming to combine Bordeaux winemaking expertise with Chile’s unique terroir. Since then, Los Vascos has been committed to producing high-quality wines that reflect both tradition and innovation, focusing on sustainable viticulture and modern winemaking techniques.
Producer and Winemaker
The winemaking team at Los Vascos is led by Philippe Rolet, who brings extensive experience from both Old and New World wine regions. Rolet emphasizes minimal intervention in the cellar to allow the true expression of the vineyard’s terroir. Under his guidance, the estate focuses on producing wines that are balanced, elegant, and reflective of their origin.
Vineyards and Micro Climate
The Los Vascos estate spans over 640 hectares in the Colchagua Valley, characterized by a Mediterranean climate with warm, dry summers and mild winters. The vineyards benefit from a cooling influence from the Pacific Ocean and the Andes Mountains, which helps maintain acidity and freshness in the grapes. The soils are predominantly clay loam with good drainage, ideal for cultivating Cabernet Sauvignon.
Vinification & Aging Methods
The 2019 vintage underwent fermentation in stainless steel tanks at controlled temperatures between 77°F and 80°F. The maceration period lasted 10 to 15 days, with regular pump-overs to extract color and tannins. Post-fermentation, the wine was aged for three months in stainless steel to preserve its fruit-driven character and freshness.
Tasting Notes
This wine exhibits a bright ruby red color. The nose is expressive, with intense aromas of red fruits such as strawberries, cherries, and ripe raspberries, complemented by herbal notes of mint, basil, and spices like black pepper. On the palate, it is crisp and juicy, with fine tannins and a balanced acidity that leads to a refreshing finish.
Food & Wine Pairing
Los Vascos Cabernet Sauvignon 2019 pairs well with a variety of dishes, including grilled meats, roasted lamb, and hearty stews. Its vibrant fruit and herbal notes complement dishes seasoned with rosemary, thyme, or mint. It also pairs nicely with aged cheeses and charcuterie boards.
Service Methods and Temperatures
To fully appreciate its flavors, serve this wine at 16–18°C (60–64°F). Decanting for 30 minutes before serving can help open up its aromatic profile. Use a standard red wine glass to concentrate its aromas and enhance the tasting experience.
Storage and Aging Potential
While this wine is ready to drink now, it can be cellared for up to 3–5 years under proper conditions. Store in a cool, dark place with a consistent temperature and humidity to allow the wine to develop additional complexity over time.
