Distillery Background and History

The Glenlivet distillery, nestled in Speyside near Ballindalloch in Moray, Scotland, was founded in 1824 and holds the distinction of being one of the earliest legal distilleries in the region. Over its long history, Glenlivet helped define the Speyside style—a lighter, fruity, and floral single malt. Today it is owned by Pernod Ricard under the Chivas Brothers division, producing a core range that includes the “Excellence” expression for selected markets. 


Master Distiller and Production Philosophy

While public information on a single “master distiller” specifically for the “Excellence” release is limited, the Glenlivet team aims for balance: they bolster the classic Glenlivet fruit-forward character with enhanced maturation in sherry or sherry-influenced casks. The “Excellence” version is positioned as a more sherried, refined variant for select markets, particularly Asia. 


Source of Ingredients (Grain, Water, Yeast)

The whisky is made from malted barley, typical Speyside yeast, and water drawn from the distillery’s famous spring, Josie’s Well. These sources, especially the water, contribute to Glenlivet’s signature purity and mineral character. 


Distillation Process

Glenlivet uses traditional copper pot stills, employing classic double distillation for its single malts. The stills’ design—lantern shaped with tall necks—helps lift lighter volatiles and maintain elegance. 


Maturation & Cask Information

The “Excellence” 12 Year is matured largely in sherry-style casks (or casks with strong sherry influence), diverging from the usual mix of European and American oak in the standard 12. This gives it a deeper oak and dried fruit character. Some sources note heavy use of spent or leeched sherry casks in its maturation. 


Tasting Notes

Nose: Rich sherry influence dominates, with dried fruit (figs, raisins), leached oak, apple juice, light malt husks and lemon zest. 

Palate: More restrained than the nose — some baked apple, mild oak bitterness, malt husks and soft lemon notes. Sherry influence is noticeable but not overbearing. 

Finish: Short to medium; dry oak bitterness lingers, with apple and citrus tones. 


Food Pairing Suggestions

Pairs well with rich cheese (Manchego, aged Gouda), dried figs or dates, pâté, roasted pork with fruit compote, and dark chocolate with nuts.


Service Suggestions and Ideal Glassware

Serve neat or with minimal water. Use a tulip or Glencairn glass to concentrate the aromas. Ideal serving temperature around 16-18 °C.


Storage and Aging Potential

Once bottled, this whisky is stable and not meant for further ageing. Store in a cool, dark environment (15–20 °C), upright. Once opened, consume within a couple of years to preserve freshness.
