Vinification & Aging Methods
This is a non-vintage Blanc de Blancs (100% Chardonnay) matured on the lees for an extended period (3+ years) in Perrier-Jouët’s cellars before disgorgement to integrate and add depth. Reserve wines are blended to maintain house consistency. Secondary fermentation is via the traditional méthode champenoise, with light dosage to maintain brightness.
Tasting Notes
Nose: White flowers (acacia, elderflower), citrus blossom, green apple, subtle brioche and light toasted notes.
Palate: Pure and incisive with citrus zest, stone fruit, chalky minerality, fine mousse, clean texture and elegant drive.
Finish: Delicate, persistent, with crisp citrus and floral echoes, fine minerality, and refined length.
Food & Wine Pairing
Excellent as an aperitif. Pairs with oysters, shellfish, sashimi, steamed white fish, sushi, scallops, soft cheeses, light poultry, and citrus-inflected desserts. Its purity lends itself well to refined dishes.
Service Methods and Temperatures
Serve chilled at 8–10 °C. Use a tulip flute or a white-wine balloon to allow aroma expression while retaining bubbles. Avoid overchilling, which mutes aromas.
Storage and Aging Potential
Store horizontally in a cool, dark cellar (~10–12 °C). As an NV cuvée, it’s crafted for early drinking but can gain tertiary complexity for 5–8 years, depending on disgorgement date.
