On the palate it is medium-bodied, with juicy fruit core, gentle tannins, and a balanced acid frame. The finish is clean and pleasant, showing hints of red berry, a whisper of black pepper, and persistent fruit.

Pairs well with savory first courses, cured meats, and moderately flavored red meats. Try it with pasta ragù, grilled sausages, roast chicken with herbs, or charcuterie boards. Service Methods and Temperatures

Storage and Aging Potential
Store horizontally in a cool, stable cellar environment (12–15 °C, 60–70 % humidity, dark, vibration-free). While Rèmole is crafted for early consumption, the 2024 vintage could develop over 4 to 6 years under good conditions, with gradual softening of tannins and emergence of secondary notes such as earth or leather. Once opened, re-cork and consume within 1–2 days.
