Winery Background and History
Maison Chanson was founded in 1750, originally as a négociant house in Burgundy. Over time it expanded to own prestigious vineyards and produce estate bottlings under Chanson Père & Fils. The strategy mixes négociant expertise with dedicated terroir-driven wines. In recent decades Chanson has invested in vineyard renewal, precision viticulture and modern cellar techniques to express Burgundy’s complexity while preserving its traditions.
Producer and Wine Maker
Produced by Chanson Père et Fils, their Burgundy team oversees everything from vineyard management to final blending. They emphasize minimal intervention, sorting, controlled fermentation, and judicious use of oak. Their philosophy is “infusion rather than construction”—allowing the vineyard’s character to emerge.
Vineyards and Micro Climate
The Clos des Fèves is a monopole (sole ownership) vineyard in Beaune, covering approximately 3.80 ha on mid-slope, between parcels of higher classification sites. Soil composition is limestone and clay, which gives structure and minerality. The vineyard benefits from Burgundy’s continental climate, with cool nights and warm days, enabling gradual ripening and retention of acidity and aromatics.
Vinification & Aging Methods
Chanson vinifies with whole clusters, careful extraction, and temperature control. Grapes are chilled immediately upon arrival to preserve freshness. They use fractional pressing to extract pure juice. The wine is aged 17–19 months in French oak barrels, about 30 % new, the rest used oak, to allow integration of structure without overwhelming the fruit.
Tasting notes
Bright ruby with a clear center. On the nose: red cherry, wild strawberry, rose petal and subtle spice. On the palate: delicate red fruits, soft tannins, good freshness, hints of earth and mineral character. The finish is elegant with lingering red fruit and spice notes.
Food & Wine Pairing
Pairs well with roast duck, pigeon, grilled pork, mushrooms, game birds, and dishes with herbs like thyme or rosemary. It also suits beef Bourguignon, aged cheeses, and soft cheeses.
Service Methods and Temperatures
Serve at around 15-17 °C. Use a Burgundy (large bowl) Pinot Noir glass. Decant 20–30 minutes to allow aromas to open. Aeration helps soften tannins and reveal bouquet.
Storage and Aging Potential
In proper cellaring (~12-14 °C, stable humidity, darkness), this wine should age gracefully for 8–12 years or more. Tertiary notes such as sous-bois, truffle, earth and dried fruit will evolve while retaining freshness.
