Distillery Background and History

Chivas Regal is produced by Chivas Brothers, a subsidiary of Pernod Ricard. The Chivas brand dates back to the 19th century, evolving from a Gentleman’s Club in Aberdeen into a global blended Scotch whisky icon. “XV” (Roman numeral 15) was launched in 2018 as a premium 15-year blend with extra cask finishing attention.

Master Distiller and Production Philosophy

The blend is overseen by master blender Sandy Hyslop. The philosophy of XV is to retain Chivas’ signature smooth, rich house style while adding layers of complexity via a selective finish in cognac casks, bridging Scotch and cognac character.

Source of Ingredients (Grain, Water, Yeast)

Chivas XV is a blended Scotch, meaning it combines components from both malt and grain whiskies. The malt whisky component comes from Chivas Brothers’ stocks (including Strathisla and other Speyside malts). Water and yeast sources are those used in the broader Chivas / Chivas Brothers operations.

Distillation Process

As a blend, the whiskies used in XV are distilled at multiple distilleries according to Scotch whisky standards (copper pot stills for malts, column stills for grains). The blending process is critical to achieve balance among the component whiskies before finishing.

Maturation & Cask Information

Chivas XV is matured for a minimum of 15 years. Then, it is finished in cognac casks (Grande Champagne cognac barrels / French oak used in cognac production). This secondary maturation in cognac casks imparts extra fruit, spice, and smoothness layers to the base Scotch blend.

Tasting Notes

Nose: Stewed red apples, orange marmalade, honey, cinnamon and juicy sultanas.

Palate: Smooth and fruity, with poached pears, butterscotch and caramel toffees.

Finish: Rounded with a touch of vanilla.

Food Pairing Suggestions

Pairs well with pear or apple tarts, foie gras, crème brûlée, mild blue cheeses, and light roasted poultry with fruit compote.

Service Methods and Ideal Glassware

Serve neat or with a drop of water to open aromas. Use a Glencairn or tulip whisky glass to concentrate the nose. Ideal tasting temperature ~16-18 °C.

Storage and Aging Potential

Once bottled, this expression is stable and not intended for further aging. Store upright in a cool, dark, stable environment (~15-20 °C). After opening, try to consume within 1–2 years to preserve aromatic integrity.
