Winery Background and History

Maison Chanson, established in 1750 in Beaune, historically operated as a négociant before slowly expanding into estate holdings across Burgundy. Over time, the domain arm (Chanson Père & Fils) acquired parcels in the Côte de Beaune and Mâconnais to produce white Burgundies. The philosophy emphasizes terroir, precision viticulture, sustainable practices (Chanson has reduced herbicide use since 2015), and balancing tradition with modern cellar techniques to express purity and freshness in their whites.


Producer and Wine Maker

Produced by Chanson Père & Fils, the winemaking team sources Chardonnay from estate or contracted vineyards in Meursault. They oversee canopy management, yield control, picking decisions, sorting, fermentation and aging. Their approach is minimalist: gentle extraction, selective oak, lees stirring, and minimal malolactic intervention to preserve aromatic clarity.


Vineyards and Micro Climate

The grapes come from Meursault, Côte de Beaune, on well-drained limestone and clay soils typical of that appellation. The exposure is favorable (southeast to south), capturing morning sunlight yet avoiding harsh mid-day heat. Burgundy’s continental climate—with warm days and cool nights—allows slow phenolic maturation and retention of acidity, especially essential in white Burgundies.


Vinification & Aging Methods

Upon harvest, grapes are lightly pressed, cold settled, and fermented temperature-controlled in a combination of French oak (new and used) and stainless steel barrels. The wine is aged 10–12 months on the fine lees, with occasional bâtonnage to enhance texture. Malolactic fermentation may be partial to avoid loss of freshness. The oak proportion is moderate to preserve fruit purity.


Tasting notes

Pale gold color. Aromas of white flowers, citrus blossom, green apple, fresh pear and a hint of minerality. On the palate: crisp and clean, with flavors of lemon, white peach, flint and subtle honeyed notes. The texture is silky and balanced, with bright acidity and a lingering mineral finish.


Food & Wine Pairing

Pairs beautifully with oysters, scallops, lobster in butter sauce, creamy seafood dishes, grilled white fish, soft goat cheese, and chicken with cream or mushroom sauces. Also fits well with light pork or veal dishes.


Service Methods and Temperatures

Serve chilled at 8-10 °C. Use a medium white wine glass to allow aromatics to develop. No decanting required; pour gently and allow a few minutes in the glass for aromas to open.


Storage and Aging Potential

Under proper cellar conditions (12-14 °C, stable humidity, darkness), this wine has modest aging potential of 5 to 8 years. Over time, layers of honey, nuts or brioche may develop while maintaining freshness and minerality.
