Winery Background and History
Maison Chanson was founded in 1750 as a négociant house in Beaune. Over time, it expanded to own vineyards across Burgundy and built a domaine arm, Chanson Père & Fils, to produce estate bottlings. The winery combines historical practices with modern investment: replanting, precision viticulture and updated cellar techniques. Their Burgundy program spans Côte de Nuits, Côte de Beaune, and parts of the Mâconnais, enabling expression of diverse terroirs under the Chanson name.
Producer and Wine Maker
The wine is produced by Chanson Père & Fils. The winemaking team handles vineyard selection, sorting, fermentations, lees stirring, and oak aging. They aim to highlight purity and minerality, employing mild extraction, measured oak use, and careful handling to balance texture and vibrancy.
Vineyards and Micro Climate
The fruit comes from the Les Chenevottes climat in Chassagne-Montrachet (1er Cru). Soils are limestone and clay, with fine gravel and good drainage. This location benefits from southeastern exposure, moderate warmth in the day and cooling nights. The microclimate supports slow ripening with retention of acidity and aromatic lift typical of Côte de Beaune whites.
Vinification & Aging Methods
The 2023 was vinified in oak and aged 11 months, with regular bâtonnage to integrate lees and build mid-palate richness. Fermentation likely took place partly in oak barrels (a mix of new and used) and stainless steel, with controlled temperatures and gentle handling to preserve aromatics.
Tasting notes
Delicate gold in color. On the nose: citrus blossoms, white orchard fruit (pear, apple), fresh lemon zest, and subtle honeysuckle. In the mouth: taut and mineral, crisp acidity, flavors of lemon, green apple and stone fruit, with saline undertones and fine texture. The finish is clean, lingering with citrus and floral echoes.

Pairs beautifully with shellfish (oysters, scallops), crême de légumes, light fish in butter sauce, poultry in creamy sauces, lobster with herbs, or mild cheeses. It also complements dishes with citrus or fresh herb elements.
Service Methods and Temperatures
Serve chilled at 8-10 °C. Use a white wine glass with moderate bowl to allow aromatics. No decanting necessary; a few minutes in glass is sufficient to open the wine.
Storage and Aging Potential
Under good cellar conditions (12-14 °C, stable humidity, darkness), it should evolve gracefully for 5 to 8 years, gaining texture and complexity (honey, nuts, toast) while holding freshness.
