Winery Background and History
Maison Chanson was founded in 1750 in Beaune, originally as a négociant house. Over time it expanded into owning vineyard parcels and forming the domain arm Chanson Père & Fils. In its Chablis program, Chanson applies the same precision and terroir focus that its Burgundy wines embody, combining traditional methods and modern cellar practice to produce clean, mineral Whites.

The wine is produced by Chanson Père & Fils. The winemaking team emphasizes minimal intervention, sorting, temperature-controlled fermentation, and restrained oak or neutral vessel aging. Their philosophy favors “infusion rather than construction” — letting the fruit and soil character emerge rather than overbuilding with extraction and oak.
Vineyards and Micro Climate
Fruit is drawn from Chablis vineyards—often from plots south of the village—on Kimmeridgian marl and limestone soils. The exposure is favorable, and the 2023 vintage in Chablis was marked by generous yield and challenges in maintaining acidity. The cooling nights help preserve freshness and minerality, though 2023 is noted to have been warmer than average exports.
Vinification & Aging Methods
Grapes are chilled on arrival, gently pressed, and fermented in stainless steel or neutral vessels to protect aromatics and minerality. No or minimal oak is used to preserve purity. Aging is likely around 9–12 months on fine lees (or similar) to build texture without masking the crisp profile.
Tasting notes
Pale gold in the glass. Aromas of citrus (lemon, lime), white flowers, and subtle sea breeze or flint notes. The palate is vibrant, crisp, with green apple, citrus zest, saline minerality, and a clean, stony finish.

Pairs excellently with oysters, shellfish, poached fish, sushi, goat cheese, white meats in light sauces, or poultry with lemon/herb.
Service Methods and Temperatures
Serve chilled at 8-10 °C. Use a white wine glass to allow aromatics. No decanting is required — a few minutes in the glass is fine.
Storage and Aging Potential
Best consumed within 5 to 8 years. Under good cellar conditions (cool, stable, dark), it may develop some tertiary notes (honey, nuts, toast) while retaining acidity.
