Winery Background and History Maison Albert Bichot, founded in 1831 by Bernard Bichot, is one of Burgundy’s most prestigious and historic family-owned wine estates. Headquartered in Beaune, the house has been passed down through six generations, currently led by Albéric Bichot. The family’s philosophy shifted significantly under Albéric’s leadership in the 1990s, moving toward sustainable and organic viticulture across their six distinct domaines. By controlling over 100 hectares of vineyards from Chablis to Beaujolais, the winery has transitioned from a traditional merchant house to a producer-focused estate that emphasizes terroir expression and meticulous vineyard management.

Producer and Wine Maker Albéric Bichot oversees the global vision of the house, while the technical direction is spearheaded by chief winemaker Alain Serveau. Serveau is renowned for his precise, non-interventionist approach, aiming to let each plot’s unique geological identity shine. The "Origines" cuvée represents the core identity of the house, intended to showcase the purity of the Chardonnay grape. Vineyards and Micro Climate The grapes for the "Origines" cuvée are sourced from a mosaic of plots located primarily in the Côte de Beaune and the Hautes-Côtes de Beaune. These vineyards sit on slopes with diverse exposures and altitudes, featuring the classic calcareous clay soils that define Burgundy’s excellence for white wines. The 2021 vintage was characterized by a "cool and classic" growing season; after a challenging spring frost, the summer remained moderate, leading to a later harvest. Vinification & Aging Methods The vinification of the "Origines" Chardonnay combines precision with traditional techniques. The grapes are hand-picked to ensure fruit integrity. Fermentation is conducted with approximately 80% of the juice in temperature-controlled stainless steel vats to preserve freshness and fruit purity, while the remaining 20% is fermented in oak barrels to add structure and complexity. The wine is then aged on its fine lees for 9 to 11 months in a combination of stainless steel (80%) and oak barriques (20%). This balanced approach ensures the wine retains its vibrant acidity while developing a subtle, creamy texture and roundness.

 

Tasting Notes The 2021 vintage exhibits a pale, brilliant straw color with silvery highlights. The nose is expressive and fresh, dominated by aromas of white flowers, citrus zest, and green apple, followed by delicate nuances of honey and dried fruits. On the palate, the wine is beautifully balanced, displaying a lively attack and a core of juicy orchard fruit. It skillfully blends "vivacity and roundness," with a clean mineral thread that carries through to the finish. However, thanks to the vibrant acidity of the 2021 season and the expert vinification, it can be kept in a cool, dark cellar for up to 5 years, where it will develop more complex notes of brioche and almond. For long-term storage, ensure a constant temperature of approximately 12°C and humidity levels around 70% to maintain the integrity of the cork and the wine’s vitality.
