Distillery Background and History

Aberlour distillery sits in the Speyside region of Scotland, in the village of Charlestown of Aberlour along the Lour Burn. Founded by James Fleming in 1879, Aberlour has long been known for producing richly sherried single malts. Its location near the River Spey and the Ben Rinnes hills provides pure spring water, while its historic cooperage relationships support the use of high-quality oak maturation. 


Master Distiller and Production Philosophy

The distillery’s master blender team emphasizes a balance between the crisp, fruity character of its new make spirit and depth from oak influence. For the Double Cask 12 Year expression, their philosophy is to mellow the sharp citrus notes by allowing the spirit to rest in both traditional oak and seasoned sherry butts before marrying them to deliver complexity and harmony. 


Source of Ingredients (Grain, Water, Yeast)

Aberlour uses 100 % malted barley. Water is drawn from local springs (via the Lour burn watershed) that traverse peat and granite substrata, contributing natural softness and purity. Internal yeast strains typical to Speyside are employed to ferment the wash, supporting fruity esters characteristic of the distillery. 


Distillation Process

Aberlour distills using traditional copper pot stills in the classic double distillation approach. The stills are designed to allow good reflux and retention of lighter flavors, producing a spirit that is both robust and aromatic prior to maturation. 


Maturation & Cask Information

This expression is matured in two types of casks (“double cask matured”) — traditional oak (often ex-bourbon or neutral oak) and seasoned sherry butts. These casks impart both oak structure and sherry-induced dried fruit, spice, and richness. The maturation period is 12 years in total. 


Tasting Notes

Nose: Golden amber with aromas of golden honey, pears, vanilla toffee, red apple, and soft oak influence. 

Palate: Smooth and balanced — tangy orange zest, red apple, liquorice, almond, hints of chocolate, toffee and gentle spice. 

Finish: Smooth and sweet with a touch of oak spice and lingering soft warmth. 


Food Pairing Suggestions

Pairs well with dark chocolate desserts, nutty desserts (almond, hazelnut), dried fruits (figs, raisins), matured cheeses (Comté, Manchego), and spiced meats (pork with cinnamon glaze, duck with fruit compote).


Serving Suggestions and Ideal Glassware

Serve neat or with a few drops of water to help open aromatics. Use a Glencairn glass or tulip whisky glass to concentrate aromas. Ideal serving temperature: ~16-18 °C.


Storage and Aging Potential

Once bottled, it is fully matured and not intended for further aging. Store upright in a cool, dark, and stable environment (~15-20 °C). After opening, aim to consume within 1–2 years to maintain optimum aromatic freshness.
