Winery Background and History

Val de l’Ours is a wine label produced by Domaines Barons de Rothschild (Lafite), a prestigious wine company with a rich history dating back to the 19th century. The name “Val de l’Ours,” meaning “Valley of the Bear,” pays homage to the region’s history, where brown bears once roamed freely. Today, the area is known for its rich biodiversity and is home to vineyards that produce wines reflecting the unique terroir of the Languedoc region. The Rothschild family’s commitment to excellence and tradition is evident in the meticulous vineyard management and winemaking practices employed in producing Val de l’Ours wines.

Producer and Winemaker

Val de l’Ours Rouge Classique 2022 is crafted under the expertise of the winemaking team at Domaine d’Aussières, part of Domaines Barons de Rothschild (Lafite). The team’s philosophy centers on expressing the authenticity of the Languedoc terroir, utilizing sustainable viticulture and meticulous vinification processes. Their approach ensures that each wine embodies the balance, complexity, and elegance characteristic of the estate’s offerings.

Vineyards and Micro Climate

The vineyards are situated in the rugged hills of the Corbières appellation, benefiting from a Mediterranean climate with hot, dry summers and mild winters. The 2022 vintage experienced a mild winter and cool spring, followed by a hot summer. Fortunately, the estate’s proximity to the sea and the influence of the “Marin” wind provided the necessary moisture for vine growth. Rainfall in early September allowed the grapes to achieve optimal ripeness, resulting in wines with remarkable freshness and aromatic intensity.

Vinification & Aging Methods

The grapes for Val de l’Ours Rouge Classique 2022 were harvested at optimal maturity and underwent traditional vinification methods. Fermentation occurred in stainless steel tanks to preserve the varietal aromas and freshness. The wine was then aged to enhance its complexity and structure, allowing the integration of flavors and the development of a harmonious profile.

Tasting Notes

Val de l’Ours Rouge Classique 2022 presents a deep, dark red color with garnet highlights. The nose is expressive, offering notes of blackcurrant, mild spices, and hints of chocolate. On the palate, the wine is generous, with flavors of red cherry, blackberry, and fresh fig. The tannins are soft and harmonious, contributing to a well-balanced and elegant finish.

Food & Wine Pairing

This wine pairs excellently with a variety of dishes, including grilled red meats, lamb, and game. Its robust structure and complex flavors also complement aged cheeses and rich stews. For a vegetarian option, consider pairing it with mushroom-based dishes or lentil casseroles.

Service Methods and Temperatures

To fully appreciate its complexity, serve Val de l’Ours Rouge Classique 2022 at 16–18°C (60–64°F). Decanting for at least 30 minutes before serving is recommended to allow the wine to open up and reveal its full aromatic potential. Use a Bordeaux-style glass to concentrate its aromas and enhance the tasting experience.

Storage and Aging Potential

Val de l’Ours Rouge Classique 2022 is suitable for aging and can be cellared for up to 5–7 years under proper conditions. Store the wine horizontally in a cool, dark place with a consistent temperature and humidity to allow it to develop additional complexity over time.
