Winery Background and History

Domaine d’Aussières, situated in the Corbières appellation of Languedoc-Roussillon, France, boasts a rich viticultural heritage dating back to Roman times. Acquired in 1999 by Domaines Barons de Rothschild (Lafite), the estate underwent significant revitalization, blending traditional winemaking practices with modern techniques. The Rothschild family’s investment aimed to restore the estate’s vineyards and facilities, producing wines that reflect the unique terroir of the region.


Producer and Winemaker

The winemaking at Domaine d’Aussières is overseen by the team at Domaines Barons de Rothschild (Lafite), who bring extensive experience from their Bordeaux estates. The team emphasizes minimal intervention in the cellar to allow the true expression of the vineyard’s terroir. Under their guidance, the estate focuses on producing wines that are balanced, elegant, and reflective of their origin.


Vineyards and Micro Climate

The vineyards of Domaine d’Aussières are situated in the rugged terrain of the Corbières appellation, characterized by a Mediterranean climate with hot, dry summers and mild winters. The estate’s vineyards are planted on a variety of soils, including limestone, clay, and schist, which contribute to the complexity of the wines. The proximity to the Mediterranean Sea provides cooling influences that help maintain acidity and freshness in the grapes.


Vinification & Aging Methods

Grapes are hand-harvested and carefully sorted before fermentation in stainless steel tanks. The wine undergoes temperature-controlled fermentation to preserve its aromatic potential. Post-malolactic fermentation, a portion of the wine is aged in French oak barrels for 12 to 16 months, while the remaining matures in concrete vats, balancing fruit purity with added complexity.

Val de l’Ours Chardonnay 2023 presents a bright, limpid color with pale yellow highlights. The nose is summery, expressive, and complex, offering aromas of yellow-fleshed fruit and exotic fruit. On the palate, the attack is lively, revealing notes of yellow-fleshed fruit and exotic fruit. The finish is fresh with aromas of aniseed, enhanced by subtle hints of vanilla, giving this wine elegance and immediate pleasure.
