Winery Background and History
Twinwoods Estate was established in 2005 in the Wilyabrup sub-region of Margaret River by the Jebsen family in collaboration with winemaker Aldo Bratovic. Despite its relative youth, the estate quickly gained acclaim for producing expressive, terroir-driven wines that marry Old World nuance with New World fruit intensity. Their focus on meticulous viticulture, quality oak aging, and small-lot winemaking has earned Twinwoods a strong reputation among Australia’s boutique wineries
Producer and Wine Maker
The wine is produced by the Twinwoods winemaking team on estate-grown fruit. Led by Aldo Bratovic and supported by a dedicated team, the approach emphasizes low-intervention practices, meticulous vineyard block selection, and traditional fermentation techniques. The philosophy centers on crafting Cabernet Sauvignon that balances elegance and structure while expressing the unique Margaret River terroir
Vineyards and Micro Climate
Grapes come from four individual vineyard blocks in Wilyabrup, approximately 30 km north of Margaret River township. The region benefits from a maritime climate—cool sea breezes and stable diurnal shifts—which supports gradual grape ripening and maintains natural acidity. Soils are gravelly loam overlaying clay, offering excellent drainage and balanced vigor. These conditions yield ripe, richly textured Cabernet Sauvignon with refined structure and balanced freshness
Vinification & Aging Methods
After separate fermentations by block, the wine is matured for around 15 months in fine-grained French oak barriques sourced from Bordeaux coopers. This aging adds structure, spice, and refined tannins. The focused use of quality oak enhances complexity without obscuring the regional fruit character, resulting in a beautifully integrated, layered wine
Tasting Notes
In the glass, the wine shows deep red hues with translucent crimson tinges. Aromas highlight dark berries, cassis, and decadent dark chocolate, lifted by fine oak. The palate is rich and complex, featuring smooth, ripe tannins and a well-structured, seamless core. It delivers a lingering finish with polished depth and layered texture
Food & Wine Pairing
Ideal with robust flavors and hearty fare. Pairs brilliantly with grilled beef, lamb chops, steak, game meats, and red-sauce pasta. The wine’s rich fruit and elegant structure also complement aged cheeses and smoky dishes, enhancing savory and umami-driven pairings
Service Methods and Temperatures
Serve at approximately 16–18 °C (61–64 °F) in a large Bordeaux-style glass. Decanting for 20–30 minutes is recommended to soften tannins and allow aromas to evolve dynamically in the glass
Storage and Aging Potential
This Cabernet possesses a polished structure that supports medium-term cellaring. Under proper storage, it can evolve gracefully for 5–7 years, during which tannins will soften and secondary nuances may emerge
