Domaine Thomas Morey, established in 2006, is situated in Chassagne-Montrachet, Burgundy. Thomas Morey, representing the tenth generation of the Morey family in winemaking, founded the estate after working alongside his father, Bernard Morey. The domaine spans approximately 13 hectares, focusing on both red and white wines from prestigious appellations such as Chassagne-Montrachet, Saint-Aubin, and Puligny-Montrachet. Thomas Morey is renowned for producing wines that reflect precision, elegance, and a deep respect for terroir.

Vineyards and Micro Climate

The “Les Castets” vineyard is a Premier Cru site located in the Saint-Aubin appellation within the Côte de Beaune sub-region of Burgundy. The soils are predominantly clay-limestone, providing excellent drainage and imparting a distinctive minerality to the wines. Vinification & Aging Methods

Grapes are hand-harvested and undergo gentle pressing to extract the juice. Fermentation occurs in temperature-controlled oak barrels, utilizing indigenous yeasts to preserve the purity of the fruit. The wine is then aged on its lees in French oak barrels, with a portion being new oak, for approximately 12 months. This aging process enhances the wine’s complexity, texture, and integration of flavors, while maintaining its freshness and balance.

The 2022 Saint-Aubin 1er Cru Les Castets presents a pale golden hue with green reflections. The nose is expressive, offering aromas of lemon zest, grapefruit, and white peach, complemented by subtle notes of butter, vanilla, and toasted almonds. On the palate, the wine is medium-bodied and well-balanced, featuring a creamy texture, vibrant acidity, and a pronounced minerality.
