Winery Background and History

Founded in 1988 by Sylvain and Nathalie Langoureau, the estate spans ~10 ha across premium Côte de Beaune sites. Certified organic, they emphasize low yields, grass cover, and hand labor. Their terroir-expressive Chardonnays—especially single‑climat bottlings—have earned acclaim for their purity, minerality, and exceptional value within Burgundy circles  .


Producer and Wine Maker

Sylvain and Nathalie oversee both vineyard and cellar. Grapes are hand-harvested and fermented with indigenous yeasts in a mix of oak (20–30% new) and stainless steel. The wine is aged ~11–12 months on fine lees, with minimal stirring and light filtration, preserving clarity and tension while showcasing the site’s character .


Vineyards and Micro Climate

“Les Frionnes” is a northeast-facing Premier Cru on the upper slopes of Saint‑Aubin. Its limestone–clay soils offer excellent drainage, while the continental climate—warm days and cool nights—ensures energetic acidity and precise phenolic ripeness. These elements deliver freshness, structure, and saline intensity  .


Vinification & Aging Methods

After gentle pressing, fermentation occurs with native yeasts in oak barrels and stainless steel. The wine is aged ~11 months on lees, without bâtonnage. It receives light filtration before bottling to ensure vibrancy and textural finesse  .


Tasting Notes

Shows pale straw color. Aromas of citrus blossoms, stone fruit, flint, and honeyed almond emerge. The palate is rich yet tensile, with creamy texture, orchard fruit, saline minerality, and a lingering, flinty finish. Reviewers describe it as “dry, delicious,” rewarding air and decanting  .


Food & Wine Pairing

Pairs beautifully with herb-roasted chicken, turkey, creamy seafood, grilled scallops, and soft cheeses like Brie or Comté. It also complements pork in light sauces and subtly spiced white fish .


Service Methods and Temperatures

Serve chilled at 12–14 °C in a white Burgundy glass. No decant needed, but opening 15–20 minutes ahead enhances aromatics. Avoid overcooling to preserve minerality and texture .


Storage and Aging Potential

Ideal drinking from 2025 to 2032. Cellar at ~12–14 °C, stable humidity. Over time, expect the development of honeyed nut and flinty tertiary notes while keeping a fresh backbone.
