Vineyards and Micro Climate
The Chardonnay grapes for Salon are sourced exclusively from Le Mesnil-sur-Oger, a Grand Cru village in the Côte des Blancs. The estate’s own “Jardin de Salon” vineyard, along with 19 other carefully selected parcels, contribute to the blend. The region’s chalky soils and cool climate impart a distinctive minerality and finesse to the wines. The 2013 vintage benefited from a cool growing season, with a late harvest in October, resulting in grapes with balanced acidity and complexity.
Vinification & Aging Methods
Salon 2013 underwent primary fermentation in stainless steel tanks, preserving the purity of the Chardonnay fruit. The wine was then aged on its lees for approximately 10 years, enhancing its depth and complexity. Disgorgement occurred in January 2023, with a dosage of 5.5 grams per liter, classifying it as a Brut. This extended aging period contributes to the Champagne’s refined mousse and layered flavors.
Tasting notes
The 2013 Salon Blanc de Blancs exhibits a pale gold hue with fine, persistent bubbles. On the nose, it offers aromas of waxed lemons, chamomile, hazelnuts, and sourdough. The palate is linear and precise, showcasing flavors of lemon confit, marzipan, white flowers, and mint. A vibrant acidity and chalky minerality provide structure, leading to a long, textured finish.
