Vineyards and Micro Climate
Grapes are sourced around the Ulmo estate in Menfi, western Sicily—characterized by Mediterranean maritime air, mineral-rich soils, and a warm climate tempered by oceanic breezes. This combination yields lively acidity and ripe, aromatic whites.
Vinification & Aging Methods
Grapes are picked at optimal ripeness and vinified in stainless steel tanks to preserve primary fruit and freshness. Following fermentation, it’s lightly filtered and bottled young, ensuring crispness and vibrancy without oak influence.()
