Bottega Pio Cesare, founded in 1881 in Alba, Piedmont, is celebrated for its Barolo and Barbaresco wines. The Gavi DOCG reflects the estate’s dedication to excellence beyond reds, offering an elegant white expression from Gavi’s renowned Cortese grape. The wine embodies Pio Cesare’s tradition of minimal-intervention winemaking—focused on purity, regional expression, and drinkability

The Pio Cesare team crafts this Gavi with emphasis on freshness and finesse. Drawing on longstanding experience, the winemakers ferment and raise the wine entirely in stainless steel with lees contact, preserving varietal vibrancy and ensuring a clean, aromatic profile that remains true to Pio Cesare’s quality-driven philosophy 


Vineyards and Micro Climate

Grapes are sourced from carefully selected hillside vineyards in the Gavi region. This area features well-drained soils and a cool, breezy microclimate that favors retention of acidity and vibrant aromatics. These conditions produce Cortese grapes with crisp citrus, stone fruit, and mineral character 


Vinification & Aging Methods

Fermented and aged exclusively in stainless steel, the wine undergoes several months of lees contact to add textural depth without diminishing freshness. No oak is used, ensuring the pure expression of Cortese and the terroir’s vibrant clarity 


Tasting Notes

Straw yellow with a greenish tint, the wine features aromas of lemon peel, white peach, blossoms, and crushed stones. The palate is crisp and dry—with precise, juicy citrus, saline mineral tones, and a refreshingly zippy finish 


Food & Wine Pairing

An excellent match for grilled or poached fish, shellfish, sushi, vegetable dishes, and young cheeses. Its vibrant acidity, mineral salinity, and aromatic clarity make it a versatile pairing for light, elegant fare 


Service Methods and Temperatures

Serve chilled at 8–10 °C (46–50 °F) in a white wine glass to preserve its freshness and aromatic lift. No decanting is required 


Storage and Aging Potential

Best enjoyed young, though it maintains vibrancy for several years. It can age gracefully until around 2028, maintaining its freshness and lively character
