Vineyards and Micro Climate

Pieve Santa Restituta’s vineyards are situated in the southwestern part of Montalcino, at elevations ranging from 320 to 400 meters above sea level. The soils are primarily clay and galestro, providing excellent drainage and mineral content. The Mediterranean climate, characterized by warm days and cool nights, allows for optimal ripening of Sangiovese grapes, resulting in wines with balanced acidity and complex aromatics.


Vinification & Aging Methods

The 2018 Brunello di Montalcino is crafted from 100% Sangiovese grapes, fermented in temperature-controlled stainless steel tanks. The wine undergoes malolactic fermentation before aging for 24 months in large Slavonian oak casks, followed by an additional 6 months in concrete tanks. This aging process enhances the wine’s structure and complexity while preserving its vibrant fruit character.


Tasting Notes

The 2018 vintage exhibits a light ruby-red color, indicative of a cooler growing season. The nose reveals aromatic notes of Mediterranean herbs such as thyme and rosemary, complemented by balsamic hints, red cherry, and plum. Subtle nuances of pine resin and sweet vanilla bean add complexity. On the palate, the wine offers a harmonious balance of bright acidity and ripe red fruit, with sweet, enveloping tannins leading to a refined finish.

This elegant Brunello pairs beautifully with classic Tuscan dishes such as wild boar ragù, bistecca alla Fiorentina, and aged pecorino cheese. Service Methods and Temperatures

Serve the 2018 Brunello di Montalcino at 16°C to 18°C (61°F to 64°F) in large, tulip-shaped wine glasses to fully appreciate its aromatic complexity. Decanting for 1 to 2 hours is recommended to allow the wine to open up and reveal its nuanced flavors. This preparation enhances the tasting experience, highlighting the wine’s elegance and depth.


Storage and Aging Potential

Store bottles horizontally in a cool, dark place with consistent temperature and humidity. The 2018 vintage has excellent aging potential, expected to evolve gracefully over the next 15 to 20 years. Over time, the wine will develop additional complexity, with tertiary notes such as dried fruits, forest floor, and subtle spice emerging, enhancing its depth and richness.
