Winery Background and History

Domaine Philippe Chavy is a family-run estate located in Puligny-Montrachet, Burgundy, France. The Chavy family has a long-standing history in viticulture, with Philippe Chavy taking over the reins in the early 1990s. The domaine is known for its commitment to sustainable farming practices, including organic and biodynamic methods, to produce wines that reflect the purity and elegance of their terroir.

Producer and Winemaker

Philippe Chavy, the proprietor and winemaker, emphasizes a minimalist approach in both the vineyard and cellar. He focuses on expressing the unique characteristics of each vineyard site, employing biodynamic practices and careful vinification techniques to craft wines that are both expressive and balanced.

Vineyards and Micro Climate

The grapes for the Bourgogne Blanc 2021 are sourced predominantly from vineyards in Puligny-Montrachet, with a smaller portion from Meursault. These sites are situated just outside the village appellation boundaries but share similar terroir, featuring limestone-rich soils and a cool continental climate. The 2021 vintage experienced cooler temperatures, contributing to the wine’s freshness and acidity.

Vinification & Aging Methods

The Chardonnay grapes were hand-harvested and pressed without crushing or settling. Fermentation occurred in oak barrels, with approximately 30% new oak used. The wine was aged on its lees for several months without bâtonnage (lees stirring), allowing it to develop complexity while maintaining its freshness and purity.

Tasting Notes

The 2021 Bourgogne Blanc exhibits a brilliant pale yellow hue. On the nose, it offers aromas of fresh pear, crabapple, and subtle floral notes. The palate is medium-bodied with a fleshy texture, showcasing flavors of quince, apple, and yellow citrus, complemented by a vibrant acidity and a long, mineral-driven finish.

Food & Wine Pairing

This Chardonnay pairs well with a variety of dishes, including roast chicken, escargot, brie cheese, and tagine. Its bright acidity and mineral backbone complement both rich and delicate flavors, making it a versatile choice for diverse cuisines.

Service Methods and Temperatures

Serve the wine at 10°C to 12°C (50°F to 54°F) to fully appreciate its aromatic complexity and balance. Decanting for 15-20 minutes before serving can help open up its bouquet and enhance its flavors. Using large, tulip-shaped white wine glasses will concentrate the aromas and allow the wine to express its full character.

Storage and Aging Potential

Store bottles horizontally in a cool, dark place with consistent temperature and humidity. The 2021 vintage can be enjoyed now or over the next 3 to 5 years. With proper cellaring, it has the potential to develop additional complexity and depth, enhancing the wine’s richness and character.
