Originally founded as a cottage hospital winery, Penfolds evolved into a pioneering force in South Australian winemaking. Their “Bin” series began in 1959 and became emblematic of their modern innovation and house style—a blend of tradition, regional sourcing, and consistency. Grapes for Bin 8 are sourced from multiple South Australian regions—including warmer subregions that provide Shiraz’s richness and cooler zones lending Cabernet structure. This diversified sourcing allows Penfolds to blend fruit from various microclimates, balancing ripe dark fruits with freshness and complexity. Cooler parcels contribute elegance and herbal nuances, while warmer sites give boldness and fleshy fruit char.


Vinification & Aging Methods

Bin 8 undergoes traditional red winemaking techniques. Grapes are fermented separately by variety, then matured in oak—using a mix of seasoned and new barrels—to integrate flavor and soften tannins. This blend is assembled post–oak maturation to achieve Penfolds’ signature harmony of fruit, oak, and tannin. The wine typically spends several months in barrel before bottling, ensuring seamless integration and aging potential.


Tasting Notes

The wine delivers a dense core of black cherry and dark chocolate with hints of black cherry liqueur. On the palate, it shows chocolate and mint layers, subtle rosemary and warm spices, plus toasty oak all harmoniously balanced with silky tannins. The fruit and oak are well integrated, giving a sense of polish and poise.

This wine pairs beautifully with grilled or roasted red meats—think ribeye steak or roast lamb—and hearty dishes with savory, herbal components. Service Methods and Temperatures

Serve slightly below room temperature, around 16–18 °C (60–64 °F). Decanting for about 30 minutes allows aromas and flavors to open up. Use a large Bordeaux-style glass to capture its rich aromas and layered palate. Aim to enjoy within 1–2 hours of pouring for optimal expression.


Storage and Aging Potential

Cellaring between 12–18 °C in a stable, dark environment will let this wine develop for 5–10 years, possibly longer. Over time, secondary notes such as leather, tobacco, and earthy complexity may emerge while tertiary fruit evolves into more savory tones. Consume sooner if you prefer vibrant fruit, or hold for those mature, complex profiles.
