Winery Background and History

Domaine Nicolas Rossignol, founded in 1997 in Volnay, Burgundy, represents the culmination of five generations of winemaking heritage. Nicolas Rossignol, the current proprietor, has expanded the estate to encompass 17 hectares across esteemed appellations such as Volnay, Pommard, Beaune, and Savigny-lès-Beaune. The estate is renowned for its commitment to biodynamic viticulture, emphasizing minimal intervention to produce wines that authentically express the unique terroirs of the Côte de Beaune.


Producer and Winemaker

Nicolas Rossignol, both owner and winemaker, is a proponent of biodynamic farming and traditional Burgundian winemaking techniques. His approach involves meticulous vineyard management, including light ploughing and the use of indigenous yeasts during fermentation. Rossignol’s philosophy centers on allowing each vineyard’s character to shine through, resulting in wines that are both expressive and reflective of their origin.


Vineyards and Micro Climate

The 2019 Pommard is crafted from vineyards situated in the Pommard appellation within the Côte de Beaune sub-region of Burgundy. These vineyards are characterized by limestone-rich soils interspersed with pebbles, contributing to the wine’s minerality and structure. The region’s continental climate, with warm summers and cool nights, allows for optimal ripening while preserving acidity, resulting in wines with depth and aromatic complexity.


Vinification & Aging Methods

Grapes are hand-harvested and undergo fermentation using indigenous yeasts in temperature-controlled vats. The wine is then aged in French oak barrels, with a portion being new oak, for approximately 12 to 15 months. This aging process imparts subtle complexity and structure, enhancing the wine’s overall balance while preserving the purity of the fruit.


Tasting Notes

The 2019 Pommard displays a vibrant ruby-red hue. The nose offers delicate aromas of wild berries, potpourri, and a subtle meatiness. On the palate, the wine is medium to full-bodied and satiny, featuring vibrant fruit notes and fine structuring tannins. The finish is persistent and elegant, marked by subtle mineral nuances. 


Food & Wine Pairing

This elegant Pinot Noir pairs beautifully with a variety of dishes. Its refined structure and vibrant fruit profile make it an excellent companion to roasted poultry, such as duck or chicken, as well as dishes featuring mushrooms or earthy components. It also complements soft cheeses and can elevate vegetarian dishes that include root vegetables or lentils.


Service Methods and Temperatures

Serve the 2019 Pommard at a temperature of 16°C to 18°C (60°F to 64°F) to fully appreciate its aromatic complexity and balance. Decanting for 30 minutes before serving can help open up the wine’s bouquet and enhance its flavors. Use Burgundy-style glasses to concentrate the aromas and allow the wine to express its full character.


Storage and Aging Potential

Store bottles horizontally in a cool, dark place with consistent temperature and humidity. The 2019 vintage has the potential to age gracefully over the next 10 to 15 years, developing additional complexity and depth. With proper cellaring, expect the emergence of tertiary notes such as dried fruits, forest floor, and earthy nuances, enhancing the wine’s richness and character.
