Winery Background and History

Founded in 2008, Mystic Island Winery is located in the Qiushan Valley of Penglai, Yantai, within China’s Shandong Province. The winery integrates local culture, art, and ecology, drawing inspiration from the mythical “Penglai Fairy Island.” With a focus on sustainable practices and community engagement, Mystic Island Winery aims to produce high-quality wines that reflect the unique terroir of the region.


Producer and Winemaker

The winemaking team at Mystic Island Winery is dedicated to crafting wines that express the unique characteristics of their vineyard sites. They employ meticulous vineyard management and winemaking techniques, combining traditional methods with modern technology. Their approach focuses on small-batch production to maintain attention to detail, ensuring the highest quality in each bottle.


Vineyards and Microclimate

The vineyards are situated in the Qiushan Valley, characterized by gentle slopes and well-drained soils composed of sand and gravel. This microclimate benefits from natural aeration and protection from extreme weather, creating optimal conditions for grape cultivation. The region’s climate, with its warm days and cool nights, allows for the development of complex flavors and balanced acidity in the grapes. The vineyard’s design includes terraced plots that take advantage of the varying soil compositions, enhancing the diversity and quality of the wines produced.


Vinification & Aging Methods

Grapes were carefully selected at full maturity from 14 small plots within the Mystic Winery Vineyard. Whole bunches were sorted and gently pressed using a membrane press. After minimal settling, the juice was transferred to French oak barrels for natural fermentation with wild yeast. The wine underwent complete malolactic fermentation during a cool and slow fermentation process. Aged for 11 months in French oak barrels—40% new and 60% one to two years old—to enhance complexity and texture.


Tasting Notes

Bright lemon-yellow in color, this Chardonnay offers fresh citrus and ripe stone fruit aromas, complemented by minerality and spicy oak notes. On the palate, it is full-bodied, elegant, and focused, with a citrus thread and creamy texture supporting the fruit and minerality. The wine concludes with a long, flinty finish, showcasing its refined structure and balance.


Food & Wine Pairing

This Chardonnay pairs well with a variety of dishes, including grilled seafood, roasted chicken, and creamy pasta dishes. Its bright acidity and mineral notes complement rich and savory flavors, making it a versatile choice for diverse culinary experiences. It also serves as a delightful accompaniment to soft cheeses and light appetizers.


Service Methods and Temperatures

To fully appreciate its nuances, serve this wine chilled at a temperature of 10–12°C (50–54°F). Using appropriate glassware, such as a white wine glass, will concentrate the wine’s bouquet and direct it to the appropriate areas of the palate. No decanting is necessary; simply chill and serve to enjoy its fresh and vibrant character.


Storage and Aging Potential

With proper storage in a cool, dark place, this wine has the potential to age gracefully for up to 5 years. Over time, it is expected to develop additional complexity, with the integration of its fruit, acidity, and oak components becoming more harmonious. Monitoring the wine’s development periodically will ensure it is enjoyed at its peak.
