Winery Background and History
Founded in 1978 by Roland Lavantureux in Lignorelles, Burgundy, Domaine Roland Lavantureux has established itself as a producer of high-quality Chablis wines. The estate has grown to encompass 21 hectares, including holdings in several Premier and Grand Cru vineyards. Now managed by Roland’s sons, Arnaud and David, the domaine continues to uphold its reputation for crafting wines that express the unique terroir of Chablis, combining traditional methods with modern precision.
Producer and Winemaker
Arnaud and David Lavantureux, the second generation at the helm of Domaine Roland Lavantureux, bring a dynamic approach to winemaking. Arnaud oversees vineyard management, ensuring sustainable practices and meticulous care of the vines, while David handles the winemaking process, focusing on precision and expression of terroir. Their collaborative efforts have led to the production of wines that are both expressive and reflective of their origins.
Vineyards and Micro Climate
The Vaudésir Grand Cru vineyard is situated in a natural amphitheater within the Chablis Grand Cru appellation, benefiting from a double exposure and Kimmeridgian soils rich in clay and limestone. These conditions contribute to the vineyard’s unique microclimate, promoting optimal ripening of the grapes and imparting a distinctive minerality to the wines. The 2022 vintage experienced favorable weather, resulting in grapes with excellent balance and concentration.
Vinification & Aging Methods
Grapes are hand-harvested and undergo fermentation primarily in oak barrels, with a smaller portion in stainless steel tanks. Approximately 85% of the wine is aged in barrels that are 3 to 5 years old, while the remaining 15% is aged in new oak. This approach allows for the development of complexity and texture while preserving the wine’s freshness and mineral character.
Tasting Notes
The 2022 Vaudésir Grand Cru exhibits a pale golden hue with green reflections. The nose is expressive, offering aromas of white peach, citrus, and subtle floral notes, complemented by hints of vanilla and spice from oak aging. On the palate, the wine is full-bodied and well-balanced, featuring a rich texture, vibrant acidity, and a pronounced minerality. Flavors of ripe orchard fruits and a touch of salinity lead to a long, elegant finish.
Food & Wine Pairing
This Grand Cru Chablis pairs exceptionally well with a variety of seafood dishes, including lobster, crab, and scallops. Its richness and acidity complement poultry dishes, such as roasted chicken or turkey, as well as creamy sauces and soft cheeses. For an optimal pairing, consider serving it alongside dishes like grilled fish with a butter sauce or mushroom risotto.
Service Methods and Temperatures
To fully appreciate its aromatic complexity and balance, serve the 2022 Vaudésir Grand Cru at a temperature of 12°C to 14°C (54°F to 57°F). Use Burgundy-style white wine glasses to enhance the wine’s bouquet and texture. Decanting is not necessary, but allowing the wine to breathe for a few minutes before serving can help open up its flavors and aromas.
Storage and Aging Potential
Store bottles horizontally in a cool, dark place with consistent temperature and humidity. The 2022 vintage has the potential to age gracefully over the next 10 to 15 years, developing additional complexity and depth. With proper cellaring, expect the emergence of tertiary notes such as honey, nuts, and earthy nuances, enhancing the wine’s richness and character.
