Winery Background and History

Founded in 1978 by Roland Lavantureux in Lignorelles, Burgundy, Domaine Roland Lavantureux has established itself as a producer of classic, terroir-driven Chablis wines. Roland’s sons, David and Arnaud, now manage the estate, bringing a modern touch while respecting traditional practices. Their commitment to expressing the unique characteristics of each vineyard has garnered international acclaim.


Producer and Winemaker

David and Arnaud Lavantureux, known as Lavantureux Frères, lead the winemaking at the domaine. They focus on minimal intervention and precise vinification to highlight the purity and minerality inherent in Chablis wines. Their approach combines traditional methods with modern techniques to produce wines of elegance and depth.


Vineyards and Micro Climate

The Bougros Grand Cru vineyard, located on the western edge of the Chablis Grand Cru slope, benefits from southeast exposure and a high proportion of clay in its Kimmeridgian limestone soils. This terroir contributes to the wine’s richness and complexity. The 2022 vintage experienced favorable conditions, resulting in healthy grapes with balanced acidity and concentration.


Vinification & Aging Methods

Grapes were hand-harvested and underwent temperature-controlled fermentation in stainless steel tanks. The wine was then aged on lees in stainless steel to preserve freshness and enhance texture. This method emphasizes the wine’s purity and allows the terroir to shine without the influence of oak.


Tasting Notes

The 2022 Bougros Grand Cru presents a brilliant golden-yellow hue. Aromas of lemon verbena, orange zest, pome fruit, nutmeg, and light toast emerge on the nose. The palate is concentrated and precise, offering a full-bodied experience with playful acidity, a hint of bitter lemon, and a long, slightly salty finish. This wine showcases energy and perfect balance.


Food & Wine Pairing

This Chablis pairs excellently with fish and seafood dishes, poultry, and soft cheeses. Its vibrant acidity and mineral backbone complement dishes like grilled lobster, roasted chicken, or creamy brie, enhancing the dining experience.


Service Methods and Temperatures

Serve at 12°C to 14°C (54°F to 57°F) to fully appreciate its aromatic complexity and balance. Decanting for 30 minutes before serving can help open up its bouquet and enhance its flavors. Using large, tulip-shaped white wine glasses will concentrate the aromas and allow the wine to express its full character.


Storage and Aging Potential

Store bottles horizontally in a cool, dark place with consistent temperature and humidity. The 2022 vintage can be enjoyed now or over the next 8 to 10 years. With proper cellaring, it has the potential to develop additional complexity and depth, enhancing the wine’s richness and character.
