Winery Background and History

Domaine Roland Lavantureux, established in 1978 by Roland Lavantureux, is a family-run estate located in Lignorelles, in the heart of the Chablis region of Burgundy, France. Today, the domaine is managed by Roland’s sons, Arnaud and David Lavantureux, who have expanded the estate’s holdings and continue the family’s commitment to producing high-quality, terroir-driven wines. The estate is known for its meticulous vineyard management and traditional winemaking techniques that highlight the unique characteristics of Chablis.

Producer and Winemaker

Arnaud and David Lavantureux oversee both vineyard operations and winemaking at the domaine. Their philosophy emphasizes minimal intervention in the cellar to allow the expression of the vineyards’ terroir. They employ sustainable farming practices and focus on producing wines that reflect the purity and minerality characteristic of Chablis.

Vineyards and Micro Climate

The grapes for the 2022 Chablis are sourced from vineyards averaging 30 years in age, situated on Kimmeridgian limestone soils rich in marine fossils. These soils impart the distinctive minerality and salinity associated with Chablis wines. The 2022 growing season was marked by warm and dry conditions, leading to excellent fruit quality with balanced acidity and concentration.

Vinification & Aging Methods

The 2022 Chablis underwent fermentation using indigenous yeasts. Aging was conducted with 70% of the wine in stainless steel tanks and 30% in 3- to 6-year-old French oak barrels for approximately 10 months. This approach preserves the wine’s freshness and minerality while adding subtle complexity and texture.

Tasting Notes

The 2022 Domaine Roland Lavantureux Chablis presents a delicate bouquet of citrus fruits—lemon zest and green apples—underpinned by subtle mineral notes of wet stone and flint. On the palate, the wine exhibits a lovely balance of richness and acidity, with a smooth, almost creamy texture that speaks to the ripeness of the fruit. The lively acidity ensures a crisp, refreshing finish, leaving behind a lingering saline minerality.

Food & Wine Pairing

This Chablis pairs excellently with seafood dishes such as oysters, shellfish, and grilled fish. It also complements poultry, foie gras, and soft cheeses like Beaufort and Comté. The wine’s bright acidity and mineral profile enhance the flavors of these dishes, making it a versatile companion at the table.

Service Methods and Temperatures

Serve the wine chilled at 10°C to 12°C (50°F to 54°F) to fully appreciate its aromatic complexity and balance. Using medium-sized white wine glasses will concentrate the aromas and allow the wine to express its full character. Decanting is not necessary, but allowing the wine to breathe for a few minutes after opening can enhance its bouquet.

Storage and Aging Potential

Store bottles in a cool, dark place with consistent temperature and humidity. The 2022 vintage can be enjoyed now for its vibrant freshness but also has the potential to age gracefully over the next 5 to 7 years. With time, the wine may develop additional complexity, showcasing honeyed and nuanced characteristics.
