Winery Background and History

Domaine Roland Lavantureux, situated in Lignorelles, Chablis, France, was founded in 1978 by Roland Lavantureux. The estate is now managed by his sons, Arnaud and David, who have expanded the domaine’s holdings and modernized its winemaking practices. The family is dedicated to producing wines that express the unique terroir of Chablis, focusing on purity, precision, and minerality.


Producer and Winemaker

Arnaud and David Lavantureux, the current proprietors and winemakers, emphasize sustainable viticulture and minimal intervention in the cellar. Their approach combines traditional methods with modern techniques to craft wines that reflect the distinct characteristics of each vineyard site. They are particularly known for their meticulous attention to detail and commitment to quality.


Vineyards and Micro Climate

The ‘Vau de Vey’ vineyard is located between the villages of Chablis and Beine, characterized by a steep slope exceeding 50%. The vines, planted in 1982, are rooted directly into limestone-rich soils, contributing to the wine’s pronounced minerality. The vineyard’s orientation and elevation provide optimal sun exposure and drainage, fostering grapes with high acidity and complexity.


Vinification & Aging Methods

Grapes are hand-harvested and undergo fermentation using indigenous yeasts. The wine is aged for 10 to 12 months, with 50% in stainless steel tanks and 50% in oak barrels ranging from new to five years old. This combination preserves the wine’s freshness while adding depth and complexity.


Tasting Notes

The 2022 Chablis 1er Cru Vau de Vey exhibits a pale straw color. The nose offers aromas of citrus, lemongrass, and nashi pear, complemented by subtle notes of oriental spices and black tea. On the palate, the wine is medium-bodied with high tension, crispness, and a pronounced mineral backbone. The finish is long and precise, showcasing the wine’s elegance and structure.


Food & Wine Pairing

This Chardonnay pairs well with seafood dishes such as sea bass, crab, and lobster. It also complements veal, poultry, and vegetarian dishes like asparagus salad with quinoa. The wine’s acidity and minerality enhance the flavors of these dishes, making it a versatile companion at the table.


Service Methods and Temperatures

Serve the wine at 11°C to 13°C (52°F to 55°F) to fully appreciate its aromatic complexity and balance. Decanting for 15-20 minutes before serving can help open up its bouquet and enhance its flavors. Using large, tulip-shaped white wine glasses will concentrate the aromas and allow the wine to express its full character.


Storage and Aging Potential

Store bottles horizontally in a cool, dark place with consistent temperature and humidity. The 2022 vintage can be enjoyed now or over the next 5 to 7 years. With proper cellaring, it has the potential to develop additional complexity and depth, enhancing the wine’s richness and character.
