Winery Background and History

Laurence and Rémi Dufaitre, a husband-and-wife team, established their winery in the Beaujolais region of France. Since 2010, they have been producing wines that reflect their commitment to organic farming and low-intervention winemaking. Influenced by pioneers like Jean Foillard, the Dufaitres focus on creating authentic expressions of the Beaujolais terroir.

Rémi and Laurence Dufaitre oversee all aspects of production, from vineyard management to winemaking. Their philosophy centers on minimal intervention, allowing the natural characteristics of the grapes and terroir to shine through. Vineyards and Micro Climate

The ‘Prémices’ cuvée is sourced from 50- to 70-year-old vines located in the Beaujolais-Villages appellation. These vineyards benefit from a temperate climate with warm summers and mild winters, ideal for ripening Gamay grapes. The soil composition, primarily granite and sand, provides excellent drainage and contributes to the wine’s mineral complexity.

Vinification & Aging Methods

Grapes for ‘Prémices’ are hand-harvested and undergo a short maceration period to extract color and flavor gently. Fermentation occurs spontaneously with native yeasts in concrete tanks, maintaining a controlled temperature to preserve the wine’s fresh fruit character. The wine is then aged in the same concrete vessels, allowing it to develop complexity without the influence of oak. Bottling is done without fining or filtration, and minimal sulfur is added to ensure stability.

The 2022 ‘Prémices’ Beaujolais-Villages presents a vibrant ruby hue. On the nose, it offers lifted notes of cassis and blueberry fruits, complemented by hints of ground pepper, violets, and graphite. The palate is light-bodied and easy-drinking, with flavors mirroring the nose and a refreshing acidity that makes it approachable and enjoyable in its youth.
