Winery Background and History

Kanaan Winery, founded in 2011 by Wang Fang—known as “Crazy Fang”—is located in Ningxia’s Helan Mountain East Foothills. The name “Kanaan” symbolizes a “land of milk and honey,” reflecting Fang’s vision for Ningxia as a premier wine-producing region. Despite the region’s harsh winters requiring vine burial, Kanaan has rapidly gained international acclaim for its high-quality wines, particularly its Cabernet Sauvignon-based blends. The winery combines sustainable viticulture with modern winemaking techniques, positioning itself as a leader in China’s burgeoning fine wine industry.

Producer and Winemaker

Wang Fang, inspired by her experiences in Germany, returned to China to pioneer quality winemaking in Ningxia. Her bold approach and commitment to excellence have earned her the moniker “Crazy Fang.” Collaborating with consultant winemaker Zhou Shuzhen, the team focuses on expressing Ningxia’s unique terroir through meticulous vineyard management and innovative winemaking techniques. Their shared emphasis on precision and innovation results in wines that are both expressive and reflective of the region’s potential.

Vineyards and Microclimate

The grapes for this Riesling are sourced from vineyards located at approximately 1,200 meters elevation in Ningxia’s Helan Mountain East Foothills. The soils are predominantly sandy with gravel layers, offering excellent drainage and mineral balance. The region experiences significant diurnal temperature variation, with hot days and cool nights, which enhances flavor development while preserving acidity. The 2022 vintage benefited from ample sunshine and lower-than-average rainfall, contributing to the wine’s balanced structure and aromatic complexity.

Vinification & Aging Methods

The 2022 Riesling was hand-harvested and whole-bunch pressed. The juice underwent cold soaking for 3 to 5 days before fermentation in temperature-controlled stainless steel tanks, which lasted approximately one week. Following fermentation, the wine was filtered and bottled without oak aging to preserve its fresh and vibrant character.

Tasting Notes

This crisp, clean, dry Riesling offers delightful notes of lime, green apple, nectarine, and white flowers. On the palate, the wine exhibits a lively acidity and a soft, moderate finish. A hint of petrol adds complexity, while the overall profile is refreshing and well-balanced, showcasing the varietal’s expressive nature in Ningxia’s unique terroir.

Food & Wine Pairing

This Riesling pairs excellently with a variety of dishes, including spicy Asian cuisine, seafood, and light poultry dishes. Its vibrant acidity and citrus notes complement the flavors of Thai green curry, sushi, grilled shrimp, and lemon-herb chicken. Additionally, it serves as a delightful accompaniment to fresh salads and soft cheeses, enhancing the dining experience with its refreshing character.

Service Methods and Temperatures

Serve this Riesling chilled at 8–10°C (46–50°F) to fully appreciate its aromatic complexity and balanced palate. No decanting is necessary; simply pour into white wine glasses to concentrate the aromas and enhance the tasting experience. Avoid serving too cold, which can mute the nuances, or too warm, which may over-accentuate the alcohol.

Storage and Aging Potential

This Riesling is best enjoyed within 3 to 5 years of the vintage to appreciate its fresh and vibrant character. Under optimal storage conditions—cool (12–15°C), dark, with 70% humidity—the wine will maintain its quality and may develop additional complexity over time. Store bottles horizontally to keep the cork moist.
