Winery Background and History

Jonata, established in 2000 in Ballard Canyon within Santa Barbara County, California, is renowned for its commitment to sustainable farming and producing wines that reflect the unique characteristics of its estate vineyards. The estate spans 600 acres, with 80 acres under vine, and is dedicated to crafting wines that express the distinct terroir of the region. Jonata’s name pays homage to the 1845 Spanish land grant, Rancho San Carlos de Jonata, and reflects the winery’s deep connection to the land and its history.


Producer and Winemaker

Matt Dees, Jonata’s winemaker since 2004, brings a background in soil science and experience from both Napa Valley and New Zealand. His philosophy centers on expressing the individuality of each vineyard block, resulting in wines that are both complex and balanced. Dees’s approach emphasizes minimal intervention, allowing the unique characteristics of the vineyard to shine through in each wine.


Vineyards and Micro Climate

The ‘Flor’ Sauvignon Blanc is sourced from Jonata’s estate vineyards in Ballard Canyon, characterized by sandy soils and a cool maritime climate. These conditions contribute to the wine’s vibrant acidity and nuanced flavor profile. The vineyard’s location benefits from diurnal temperature shifts, which help preserve acidity and enhance the aromatic complexity of the grapes.


Vinification & Aging Methods

The 2021 vintage comprises 85% Sauvignon Blanc (clone Musqué) and 15% Sémillon (clone 2). Fermentation and aging occurred over 11 months in a combination of one-third new French oak, one-third neutral French oak, and one-third stainless steel tanks. This regimen imparts depth and complexity while preserving the wine’s freshness.


Tasting Notes

The 2021 ‘Flor’ presents a harmonious blend of aromatic and flavor elements. Aromas include honeysuckle, lime curd, chamomile, grapefruit peel, and nutmeg. On the palate, strong notes of lime zest and wildflower honey are evident on a broad and generous mid-palate. The wine is already harmonious, with energy and tension that suggest it will evolve beautifully in the cellar. Notes of galangal and loquat push through the long and luxurious finish.

This Sauvignon Blanc pairs well with a variety of dishes, including grilled seafood, goat cheese salads, and herb-roasted chicken.
